Star is absolutely amazing! We did this food tour with Star 2 years ago and it was so memorable. We have been back to Pitillal several times now because of this experience. We gained so much knowledge of what to eat and now are so much more ambitious in seeking out delicious mexican food. Star took some treasured pics of us and she encompasses all that we love about Mexico.

So glad you let us revisit Pitillal and their magnificent church; the wooden carving of Christ above the alter alone is worth the visit and the people are unforgettable --- what a beautiful place! The community park on the square across form the church is great for people watching. The food is just as amazing as this special little town and its people are so proud of their town, in all respects.

Omg I think now you are going to love Mexico really. When you go with a Mexican to non-tourist places. Discover a magical Mexico. which is not commercial but is full of culture and tradition. When you have a chance. You have to go to weddings, quinceaneras or a funeral. Both ranch or city. That is like going to another planet. A ranch funeral. It is sad or maybe not! It has several phases. There is coffee with bread and mariachi music. It ends at nine days. Between ceremonies and party! Mexico always puts its dead to dance. Even if it's not day of the dead

La güera is my kind of people because she likes beans, fresh cheese and tortillas. I enjoy "frijoles de la olla" with minced onion, coriander and green serrano chile, with fresh tortillas and maybe a little fresh cheese on top.

At some places like Tacos El Califa, Taquearte, and El Farolito in Mexico City, they also have tacos de costra. I like them because they still have some melty cheese in the middle with the meat filling. Though they are muy caro, they are a nice treat sometimes.

I suggest "capirotada de leche" ingredients: sliced bolillo from a day before so it gets tough, butter, condensed milk Nestlé, pine kernels, walnuts, shreded coconut, raisins, cinnamon, a little clove, molases: (PILONCILLO), ranchero cheese. Delicious. Sauté the bread on butter, boil water with piloncillo a little cinnamon and clove until piloncillo dissolves, place on a refractory a layer of bread and sprinkle it with nuts, pine kernels, raisins, shreded cheese, shreded coconut. Pour half of the piloncillo, repit the procedure to form 2 layers, place the refractory in an oven at 180 degrees for 15 minutes, withdraw it from the oven, let it cool and add the condensed milk. Enjoy it.

Boiled pinto beans made at home can be delicious Kennons!! Fresh bolillo with boiled pinto beans (slightly smashed with a fork) after doing Cross Fit...yummy!! You can always make delicious Capirotada with a good recipe!

Well, Star really lives up to her name, whether in english, spanish or náhuatl, the last two, Estrella and Citlali, a very beautiful and intelligent lady! The chilaquiles, both the red and the green looked so good, I've never tried a cochinita pibil torta or taco, but after seeing mi Goyo chow down, looking for some place here in Querétaro that makes the cochinita.
