This was a great video. I really enjoyed how you showed all the different ways that a single technique can be used. The variety of flavors and uses of different aromatics was very inspiring! Where I live, it's difficult to find galangal and sugarcane, but I can find lemongrass. Just out of curiosity, would that work as something to put on the bottom, or do you think the flavor would be too strong?

Would it be weird if I said I enjoyed the style of the older videos more than these current ones because they didn't have all the extra drawing graphics? Loved the new Vegan Vietnamese book too.
