The remaining 3 semifinalists (Andre, Jennifer and Josh) are excited when the 3 judges introduce guest judge Tessa Virtue (an Olympic ice dancer and gold medalist) to the judging panel as the special guest star. Tessa explains the theme of this last mystery box challenge of the season. The 3 semifinalists are tasked with creating a stunningly elevated, dramatic dish with the theme of “Fire and Ice” using molecular gastronomy to elevate their plating to artistically inventive and innovative heights.

This mystery box challenge was probably the best one in MC Canada.The idea for the challenge itself is interesting and vague, leaving a lot of room for creativity, the remaining contestants are fun to watch and all three meals are very beautiful.

How do they do the judging without the dishes losing their ideal temperature when theyre waiting?

They don't. At least usually for most challenges they actually give the contestants extra time at the end of the challenge to clean up presentation, so by the time things get tasted, its usually cold. Most of the actual tasting while its good is done mid challenge. I heard this from an old contestant who didn't sign the non disclosure contract online.

Usually the judges taste these homecooks' dishes when cooking and retasted the dish in a way smaller portion right after the time ran out. The mechanism's slightly different each country. Brazil has the contestants create two identical dishes, one for tasting.

Dulse has an interesting flavor. Instead of table salt, in my home we use a blend of sea salt with dulse and kelp flakes. It adds nutrients to whatever I sprinkle it on, and it's amazing on things like hot buttered popcorn.

It's because his duck didn't have the seared colour that the judges wanted. All 3 dishes were so perfect that that's literally the only way they could choose who to send home. I think if his duck was better, Andre would've actually been sent home.
