I just bought a weber 22 inch kettle today (14 Jan 2025) so will try your rib method in the spring when our Alberta temps are way higher.

@geordienufc3132 That's one good thing about South Texas. Grilling season is pretty much tear round. When it electricity went out during bad weather, I was cooking in the oven. The power would come on and off. I finally gave up and finished everything on my grill. YAAAAAAY Weber! Thanks for the comment.
