To the first part of your question on "Kafir" here's some add on: First we need to understand why is it important to ascertain the legal status of a person as per Islamic law before answering if a Muslim believer can be a Kafir (disbeliever) or no. Leading scholar Sheikh Hamza Yusuf, of Zaytuna Institute, says the legal status of a person is important to ascertain because of consequences of such legal standing with regard to marriage, birth, death, property inheritance etc. A Kafir does not inherit from Muslims, nor do Muslims inherit from a kafir. Moreover, a kafir is not buried according to Islamic funeral rites, nor is he or she prayed for after death by Muslims. A kafir cannot marry a Muslim neither can a Muslim marry a kafir. Qur'ān 23.117 Hence, he who invokes, other than Allah, any other deity for whose existence he has no evidence - shall but find his reckoning with his Sustainer: [and,] verily, such kafir-s will never attain to a happy state. To tge last part, you have made a tall claim and a statement - my answer is If islam was that tolerant as you pointed will it have apostasy mentioned in Quran and it related books ?? 9:5: “And when the forbidden months have passed, kill the idolaters wherever you find them and take them prisoners, and beleaguer them, and lie in wait for them at every place of ambush. But if they repent and observe Prayer and pay the Zakat, then leave their way free. Surely, Allah is Most Forgiving, Merciful.” 3:151: “Soon shall We cast terror into the hearts of the Unbelievers, for that they joined companions with Allah, for which He had sent no authority”. 9:29: “Fight those who believe not in Allah nor the Last Day, nor hold that forbidden which hath been forbidden by Allah and His Messenger, nor acknowledge the religion of Truth, (even if they are) of the People of the Book, until they pay the Jizya with willing submission, and feel themselves subdued.” (“People of the Book” refers to Christians and Jews.) Apostasy is still practiced in 13 islamic countries as well. 😢😢 There are many more verses that shows the real colour of islam when dealing with the others.

Arif, I would suggest that both you and this young lady read two important books related to evolution. The first is ‘The selfish gene’ by Richard Dawkins. The second is Sapiens by Yuval Noah hariri. Both are highly scientific works and take it to the next level beyond Charles Darwin. Hariri explains the birth of the concept of God, its utility to mankind in a certain stage of human evolution and its near complete uselessness in our current stage of evolution. I think these books will be very helpful to both of you, that is you and especially that young lady who is a student of psychology.
