matcha chiffon cake with cream | 低糖版 抹茶戚风 奶油蛋糕
Ingredients:
3颗鸡蛋 55g左右
低筋面粉45g
牛奶 50ml
植物油 30ml
细砂糖 35g
抹茶粉 5g
玉米淀粉 1.5g
少许柠檬汁
鲜奶油 250 + 炼乳 20g
鲜奶油 350 + 炼乳 30g
抹茶粉10g
模具: 6英寸 圆形(直径15cm)
烘烤温度和时间:140℃(285℉) 烤箱上下火烤制50分钟
***************************************************************************************
3 eggs about 55g
Low gluten flour 45g
Milk 50ml
Vegetable oil 30ml
Caster sugar 35g
Matcha powder 5g
Cornstarch 1.5g
lemon juice
Whipping cream 250g + Condensed Milk 20g
Whipping cream 350g + Condensed Milk 30g
Matcha powder 10g
Baking time & temperature:
Bake in a preheated oven at 140℃(285℉)for 50 minutes ( Top & bottom heat)
Mold size: round pan 15cm

Thank you so much for sharing! I tried this recipe and i overwhipped my cream. Next time I have to follow your directions of stopping when its 70-80% whipped. thank you!!

Thank you for sharing this with me. Over-whipping can be remedied, just add a little whipping cream and fold gently with a spatula, and it will become smooth again. 😄

Thank you for this recipe! 💓 When I saw the video, immediately I knew I would be trying to make this cake cos it’s so beautiful and I love matcha ❤️ So I finally made one yesterday and the chiffon is so super fine, soft and delicious, even without the cream 😋😋😋 Thank you once again 💓💓 Incidentally, can I know which brand of matcha powder did you use? I find that mine’s colour is a bit light…. 🥺

鲜奶油做的奶油霜放室温会不会溶化掉?能耐幾个小時呢?

谢谢你的留言,鲜奶油做的奶油霜,可以辅助加一些稳定奶油的配料,但没有绝对扛热的奶油霜,只有减缓融化速度。 如果想室温存放的还是建议制作butter cream。😄

may i ask what is that in between the small bowl and the big bowl when your whipping the cream? Is that a heating pan or somethings

When I whip the cream, the small bowl store the cream while the large bowl is kept cold with ice packs to keep the cream more stable.😄

Please do not apply oil or butter to the mold, the cake will collapse.

Thank you for your message. The low-gluten flour makes cake lighter and fluffier, especially for the chiffon cake, I highly recommend you use the low-gluten flour.

太棒了😍但是不太建议换成淡奶, 会影响打发,如果不喜欢炼乳可直接替换糖,糖的比例一般是奶油的7-10%

你可以这么理解,一般打淡奶油都是放8%~12%糖,也就是250的淡奶油需要放20~30的糖,而影片中的250淡奶油仅仅放了20g的炼乳 而炼乳的含糖量是每100g有54g 换算来看也仅仅是10g左右的糖罢了
