In this video, I'll show you how to make a Matcha Fraisier. In France, the strawberry season has probably started for a few weeks. They're sold widely in supermarkets, very tasty and cheap. So I think this is the perfect time to make this cake ^^.
Fraisier is a traditional and classic French Dessert. Its name basically means strawberries. A traditional Fraisier will have 2 layers of genoise sponge cake, a cream filling, normally is crème diplomate and decorated with fresh strawberries.
But today's cake will be a little different from the tradition. It will have 2 layers matcha sponge cake along with a strawberry cheesecake and fresh strawberries. It's not difficult to make, let's make it together.

INGREDIENTS:
MATCHA GENOISE:
18cm - 7 inches round mold
3 large eggs
a pinch of salt
1/8 tsp cream of tartar
70g (5 tbsp) sugar
65g (1/2 cup) cake flour
10g (5 tsp) matcha powder
30g (2 tbsp) whole milk
20g (1.5 tbsp) vegetable oil
STRAWBERRY CHEESECAKE:
16cm - 6 inches round mold
7g gelatin
210g strawberries
70g (5 tbsp) sugar
180g cream cheese
150g (2/3 cup) whipping cream
DECORATION:
300g strawberries
Fondant flowers
Mint leaves
