300g premix *
1 tsp xanthan gum (if your premix does not include it)
For the ferment (15g dry yeast + 1 tsp sugar in 1/2 cup warm water)
100g of butter (not replaced by oil, they will be hard)
1 egg
salt quantity needed
optional sugar a teaspoon
Premix in this case use Dimax brand you can make it homemade (for 1kg of premix 300g of rice flour + 400g of corn starch + 300g of cassava starch)
Oven 180 °C 20 min (once they are golden brown on the bottom, turn them over so they cook on top)
Clarifications: If the dough does not come together, you can add water little by little and knead. If the dough is very sticky and impossible to work with, add premix or cornstarch little by little. Sometimes the size of the eggs or the type of premix has a lot of influence.
