My gym calls it the dummy sweep. I was caught with it in my first bjj competition as a 1 stripe white belt. The dude that got me down tried to stand up but I just reached forward and pushed him down then got on top for the rest of the match. It's funny to me that even though I fell to it he had nothing else to offer! In all fairness, I was still the dummy! Lol

Yeah, a good teacher gives you a technique and a counter for it as well. This is why traditional Kung Fu styles had weird moves and defensive techniques that seemed to only work against that same style, the students probably asked for counters for such things and the masters had to come up with them hahaha

i hit this all the time i prefer to push just above both knees at the same time it forces the legs straight and the ankles get picked the same way, also catching the foot and lifting straight up helps you get on top before they can recover

Have you ever thought about the fact that when someone demonstrates the technique, they show it slowly so people can actually see the steps and understand what the move's about? There are sport specific situations and people train for said situations accordingly. Let's say you drill how to defend against kimura. What's gonna be first step of the drill? Surprise surprise, someone going for kimura on you "in a certain way".This sweep does work, is usable in grappling, I used it myself and can say from experience that while basic, it's certainly functional.
