You see for extreme close ups, they have to use the actual actor or actress. For long range shots or ones that don't show their faces, they can use the stunt double, because you can't tell the difference in that aspect.

So it took until today in 2022 for me to finally realise that Julie Andrew’s saying she did a lot of flying in her day Is likely a reference to her role in Mary Poppins (she flew via her umbrella) And this is back-upped via the fact that both the Princess Diaries & Mary Poppin’s are Disney film (Why it just came to me - the other day CinemaSins did a video on the first movie & made me think of both films)
