Maureen is a Clinical Nurse Specialist and Mindfulness and Yoga Teacher at UC Davis Health and Del Norte Swim Club in Sacramento, California. Her path has evolved from trying to be a perfect human to being perfectly human.
Maureen authored and/or edited many chapters in the Core Curriculum for Nephrology Nursing and has completed 7 years as a volunteer for the Nephrology Nursing Certification Commission, serving in several roles including President, leading the effort to establish credentialing mechanisms to promote patient safety and to improve the quality of care provided to nephrology patients.
She works full time as a Clinical Nurse Specialist at UC Davis Health in Sacramento, California, where she teams with patients and families facing Kidney Failure to plan health care and build self-care.
Maureen discovered Yoga and Mindfulness in 2009, and later completed her yoga teacher training at the White Lotus Foundation in Santa Barbara and Mindful Self Compassion teacher training with UC San Diego. Most recently, Maureen completed her Doctorate in Nursing Practice, with her phenomena of interest being healthcare provider wellbeing and burnout. She followed with board certification with the American College of Lifestyle Medicine.
Maureen's deep appreciation for the transformative power of lifestyle medicine is a driving force in her life. She eagerly shares her knowledge and experiences with her patients and health professional colleagues, reminding them that they, too, are patients on a different day. Her passion for promoting well-being and self-care is truly inspiring.
These days, you can also find Maureen teaching yoga at her local gym or online for UC Davis Integrative Medicine, preparing Whole Food Plant Based meals, and inviting friends and family over to test her newest recipe. Empowering people (patients, colleagues, and friends) to “Live their Best Life” is a passion for Maureen.

I’m not a happy camper, I went vegan to help my kidney numbers, but I went from a 48 to a 30. I’m going back to a modified keto.

As a stage 3 CKD sufferer I only eat 40 GRAMS of protein a day! Too much protein is bad for you also, doesn't matter the type. I did my own research about plant based eating. You Google what a normal size healthy person, who isn't weight training, man or woman, should be eating at the most a day. It's not as much as you think! People are getting more protein then they should be. SAD diet and Keto all push meat, dairy & fat! I've been vegan for 1 yr now. My eGFR started at 40, this week my number went upto 62! I'm happy with that number & hoping it just increases with time! I wish you luck on your modified keto journey. ❤

What are the top plant based items people get from Trader Joe’s. I shop mostly at Whole Foods for produce. I don’t know what I might be missing.

I work at Whole Foods. Sometimes I shop at Trader Joe's, but I think WFs is way better. Maybe I'm just biased. 😊

Why would you make so much dressing? Using 2 cups of balsamic to make the dressing, then only using 3 tablespoons of that dressing in the dish seems excessive. I wouldn’t use that much dressing on other dishes within a few days. It has raw garlic in it, so would need to be used rather quickly I think.
