Mauritian Fried Noodles: Mine Frit

Mine Frit is a dish of fried noodles from Mauritius. This version is near that of Chinese fried noodles, but with a special use of garlic chives, omelet topping and a delicious garlic dipping sauce.

👩‍🍳 Ingredients for 4 people
500g egg noodles
8 shrimps
5 garlic cloves
2 carrots
150g green cabbage
150g bok choy or choy sum
1 onion
80g garlic chives
3 eggs
4 tbsp vegetable oil
Marinade:
400g chicken thighs or breasts
1 tsp grated ginger
1 tbsp light soy sauce
1 tbsp oyster sauce
1 pinch salt
Ground pepper
1 tsp cornstarch
1 tbsp vegetable oil
Seasoning sauce:
2 tbsp light soy sauce
1 tsp dark soy sauce
2 tbsp oyster sauce
1 tbsp sugar
1 tbsp sesame oil
½ tsp salt
¼ tsp ground pepper
Garlic dipping Sauce:
15cl water
1 garlic chive
A little hot chilli (or sweet)
2 garlic cloves
3 tbsp white rice vinegar
1 tsp salt
1 tsp sugar

my Mauritian family always makes this dish and you did it to the tea! our family also puts a Chinese sausage called lap cheong, which adds a sweet little add too it!
