@catji92662 жыл бұрын
Paneer is more like Feta cheese, the consistency. But feta is very salty, normally/usually kept in brine (salt water.) And feta is made from goat milk. But Mozzarella melts, that's why it's the basic cheese for pizza. ...And so it works well for grilled cheese / toasted cheese sandwiches. Paneer is not. What is the same is that they are unfermented.

Ok if you take non pasteurized milk and heat it up, does not it become pasteurized anyway (more so because you are making the solution acidic by adding vinegar to it...)? :D That said, huge respect for the video. Awesome to get the method straight from people who know how it works. :))))
@kittymcmeowmeow13 жыл бұрын
Pasteurization requires being held at a higher temperature for a longer period of time, so the milk isn't pasturized

Been making some home made pizzas for a bit now, with baking powder admittedly, and I love this, now I can make margherita from scratch with home grown tomatoes and paprika (I like the spiciness in the sauce) using homemade cheese instead in a couple of minutes, 10/10

I made pizza dough with baking powder once, tasted like dry pastry. How does yours turn out?
@DenethorDurrandir3 жыл бұрын
Depending on how wet/dry I happen to make the dough (I'm eyeballing everything very roughtly) when it's wet it's great, when it's dryer it turns out closer to frozen pizza, both in taste and texture, which is alright
@ThatDruidDude2 жыл бұрын
Noooo. Make it with yeast. Search for wolfgang puck pizza dough by chef john. Its sooo easy and quick
@KrisPbacon422 жыл бұрын
@@ThatDruidDude usually I like to do a 60% hydration dough and let it rise in the fridge for 1-2 days, comes out crisp and well risen with great flavour

Finding raw milk is the hard part where I live.
@joeldcanfield_spinhead3 жыл бұрын
I've read numerous places that it can be made, though less perfectly, with any whole milk. I'll be trying it with store bought goat milk to see.
@quaniklp12793 жыл бұрын
It also works with pasteurized or even UHT milk. You might need to add a little more vinegar, and don't get as good as a result as with raw milk, but it still works.

Raw milk and raw milk products, including soft cheese, ice cream, and yogurt, can be contaminated with harmful bacteria and other germs that can cause serious illness, hospitalization, or death. I agree with you but it sure would be nice to make fresh mozzarella without having to fight a cheese cloth. I have the worst luck with them. I'm sure if I bought better cheese cloths that wouldn't be a problem so I'm probably my own worst enemy in that regard...lol.

WOW, no stretching, no microwave, no hanging bags, no messing the whole kitchen up? Does it melt on pizza? I have two girl goats pregnant this year and lost my recipe for mozz. How much vinegar for a US gallon of goat's milk? No salt but in the brine? Hey Folks, You can drink the whey, use it to cook pasta or add it to soups. Don't use it on house plants cause it attracts nits, nats & flies but the outside garden tomato plants love it.
