A quality Comedic Actress like Maya deserves better work than The Emoji Movie and The Angry Birds Movie, how come she's never got a quality signature role like Tina Fey and Amy Poehler got?

Tina and Amy are super big. But that's the caveat of being an SNL alumnus. You're very talented, but at the same time you'll do anything, even if it's crap. Case in point, "The House."
