So what work is getting done at the machine shop?

It’s actually already done and car is halfway back together lol. Full head disassembly, hot tanked (cleaned) along with oil galleries cleaned out, all reusable parts cleaned, valves checked for roundness then lapped , replaced all valve seals , valve guides checked and or replaced , cams cleaned and inspected. Basically when the head goes back together every part has been inspected cleaned, replaced if needed then reassembled with oem spec valve lash.
