You can't beat a real comp rib with your rub on it Harry! Very nice comparison between the 3 versions. I'm glad you can now have a Mc Rib anytime of the year!!! You should add a McRib to your food bucket list just to say you tried a rib sandwich with 70 ingredients in it including a foaming chemical called azodicarbonamide used to make bubbles in yoga mats. I did a McRib a few years ago using real ribs like you did here, and oh yes, so much better than McDonalds, but I'm guilty, I have eaten the real McRibs. They actually are pretty good, but can never compete with the real ribs. Awesome video Harry. You and Greg both did a outstanding job!

Good to see you again Harry. Just got my internet back from Hurricane Michael Oct 10, (PC, Fl.) . So like I said lots of videos to watch to catch up. Had to buy another WSM got a few parts from the old one rest got smashed. I saw the fires you guys had. Hard to say what's worse. Canes just ruin everything. Then work and work to get a subpar home back. Fire you lose everything and start over. (sounds better to me). Hope your safe and never have to go through this. Because you have to spread the love.

Thanks Harry! I got inspired by your clone version, and made one using store bought ground pork, seasonings, some breadcrumbs, and an egg as a binder. But instead of baking the patties, I threw them on the grill and sauced them up at the end. If you do a clone version, grill them instead of baking, 100xs better! Sandwich was so good, definitely making them again. Next time I will also grill them on my charcoal/wood grill instead of my gas grill too.

Chef Aren from McD who invented McRib was inspired by the sauce slathered pork sandwiches from North Carolina. How do you deal with the rib bones? Whats the proper method - pull them off before eating or suck on them and spit out like watermelon seeds? :-)

The St. Louis version tasted great but it took me 5 hours. The tradeoff is the patty took 45 mins so, in a pinch, I'm doing the Walmart 5-ingredient patty method as I'm often rushed for time. :-)

That was a very interesting video and as a German I am always envious when I see rib cuts you pitmasters use. Hard to get certain cuts here with my local butcher...but at least we have a McRib as a regular item on the menu in Germany. @@SlapYoDaddyBBQ The term economic rape comes to mind. I just picked up some ground pork. What I'm going to try is to sous vide the party with the bbq sauce in the bag and then try just giving it a quick broil or perhaps just give it a ride in the skillet. Optimal would be to just be to be able to pre-cook them in the bag with a measured amount of sauce and then into the freezer. The rolls could also be individualy packed and frozen so when the mood strikes I can eat tasty homemade food, and avoid messing up the kitchen but once a month. It might take a little tweaking of recipes and planning but with this system shopping and kitchen clean up can be done monthly or more and food can be purchased in bulk and at a big savings.

My pick for flavor would be your deboned sandwich as well, (imo due to less processing alone), then your cloned patty, then.... the reheated Micky D's... (I've reheated ff stuff and it's icky...)... Harry if you mix the meat by hand for about 20 minutes you will get a protein extraction. and it becomes very sticky and you wont need any food glue..

In my opinion there are four great things about the homemade McRib 1.It's bigger 2.It tastes much better 3.It's healthier because it's real food not that processed toxic waste you get at McDonald's 4.And best of all once you know how to make it you can enjoy it anytime you want, when it goes away for awhile you don't have to miss it.

Both you guys made me crave the McRib and now I can’t find one. Anyway, all of em made my mouth water but the syd one would be my choice. Hardee’s had/has a hamburger rib (thickburger) sandwich which was awesome for short time and it was real baby back rib meat deboned. Maybe they still have it.

Hilarious. I love that you are doing stuff that us common non-competition winners winder and would try. Question - what temp did you cook your meat glue at and what temp for.your comp St. Louis? I use a Traeger Silverton and would love to try both.

Thanks Jim. It was helluva fun doing clone recipes and I have many more in my head waiting to be experimented on. I did everything in a 275F oven so try same in your Traeger. You done well sir. I like how you removed the bones from the spare with the precision of a Dr. in an Operating Room:-) I like your style. Keep it simple. You may not get your McRib as authentic looking as Greg, but it is a lot less work !!!! I have only had the McRib once long ago. While it was a tasty sandwich, I like the idea of barbecuing a spare and removing the bones as you did here. If I get inspired to try my own version of a McRib clone, I will be lazier than you. I will just get ground pork, season it up, shape it and cook it on the grill. Both videos were informative and enjoyable to watch. You win though with your simplicity.

Great job Harry. However, my vote is for Greg at Ballistic. He stuck to using products McD reportedly uses and cooking processes that they probably use. His rib box contraption was pure genious. I'm betting your real rib rendition tasted much better than any of the clones.

Welcome Sylvie. Yes, I agree. Greg had mucho firepower with vacuum machine, custom wooden box, rosemary syrup, poaching in sauce! I opted for my usual lazyman approach with five ingredients from Walmart and some meat glue (or cornstarch if you don't have meat glue). Hopefully we accomplished the real reason why Greg and I released our videos at the same time which is to show how it's possible to make a clone in multiple ways. Whether complex or simple methods, we wanted to show that having fun, investing passion in what you do, and showing the world that there is no right or wrong in barbecue. Thanks for stopping by. Very interesting to see both yours and Gregs approach and outcomes. I feel that an abuncance of sauce is really essential to a good McRib, so in terms of authenticity, I think Greg is closer to the real deal, but I'd love to try the Competition McRib, I'm sure it's tasty. Btw, if you've got McRib cravings and it's off-season, you can always get on a plane - German McD's serves them all-year round! Cheers!

I've never had a mc rib. If it's so popular, then why is it a seasonal thing? I wonder if I can find any around here... I'll go out later today and see what I can do. Hey Angelo, McD scored a huge marketing coup with their seasonal releases. And they seem to coincide when pork prices are low it is rumored.
