Great instructions - one thing I'd do with the excess strap on the side panniers, though, is rather than tucking it in with the elastic holder, is cut it down to size once fitted, and seal the ends with a lighter, as the potential consequences of the tape coming out of the elastic loop and getting tangled into your wheel, gears, or any other mechanical parts, would really make me nervous.

It's probably because they're using a specific line of soft luggage and the demo bike has a metal tank. You can hardly blame them for that since the rest of the video was very informative.
