As always, check back in a few days for the second part of the Step Feed Dump Mead, where we finish it, and give a taste test!

Hi guys. I'm the guy who had that crazy high OG mead last month. Started at 1.180. Just wanted to give you an update. It has been a little over a month and it finally finished fermenting. I just racked it yesterday and it is at 1.090 gravity. It is super sweet (but I like that anyway) and very strong alcohol. I tossed in a little bit of allspice and a cinnamon stick to give it some spice to balance the sweet. I plan to give that about a week and then I'll be back with the final result of taste. Thanks for the tips on how to save this batch. it helped a lot.

FYI, from a now fairly damn experienced make/distiller. He used the Lalvin EC-1118 only because it is such a damn rugged, robust yeast. It is likely the only (fermentation usable) yeast, save for maybe standard bread yeast, that can survive the stresses that he, intentionally, put the yeast up to.

Last time, and the first time, I did mead I carefully mixed in the honey. What happened as a result is that the yeast went crazy and exploded sticky stuff out of the vapor lock everywhere. I just put the honey in and didn't mix this time, it's fine! Bubbling away slow, it's only day one yet, just getting going.

I haven't been bothering to stir for a couple years now. The one concession to that is adding water to the honey bottle and shaking it to get a clean rinse. I'll quite happily leave a full 3lbs sitting on the bottom of the vessel, and in a few days it will all be gone. I mostly use 71b and 1118c for yeast, and those seem willing to start up with just about anything.

Hey Brian if you want to see something cool put your yeast in and then drizzle honey in and as the honey hits the water it starts dragging all of the yeast layer down with itself and down to the bottom goes the yeast it’s pretty fun

I think if you don't mix it the mead kind of automatically becomes step feed. The honey dissolves gradually and yeast can't get to all of it at once.

Hey there folks, I have a great idea for a video! It could work for both channels too!! How about a vinegar how to!! You could disguise it as a regular wine or mead(??) how to and maybe sabotage the batch? Idk just a thought.
@CitySteadingBrews
@CitySteadingBrews 2 жыл бұрын
Well... we plant to do vinegar, but that's not really how it's done. We won't sabotage a brew, since there's no guarantee it will make usable vinegar and not just get some other infection. However, we will do a vinegar video, and it will likely be on the other channel :)

Raisins make almost every mead better. Besides, the yeast loves them! They are literally dried grapes, lol!! It's beyond funny to me when I see some channels seemingly going out of their way NOT to use raisins...because they're not "proper nutrient". As if anyone in the last decade or so ever said they were. 😂

I've done the "no mix" method with sugar wines and it just dissolves on its own eventually, although it seems like it's still more saturated with sugar on the bottom of the fermenter until you mix or swirl a little.

Hi, New biggest fan of your channel XD. I'm going to start my first mead tomorrow. I have quiet a sore back and shaking the jar for O² seems quiet taxing. Could I use a mixer (sanitized!) and mix the water and honey, then add the yeast/flavors, then stur? I dont see why not, but I wanted your opinion on the matter :). Keep up the great work!

So my first batch set, because I did two different ones my first time, they both ended up with a weird black oily film on top that appeared to be mold. And ya I had prepped everything with star san. The second time, I only did one batch, and I could not get the yeast to do much of anything and I pitched new yeast two times in it and it finally started going but when it was all said and done it had a very off yeasty flavor like all the yeast that had gone it but didn't work just turned into flavorings.

I think it would be interesting to do a 2 batches using something such as 71B and one using KVEIK and see what the differences in taste are during and aged.
