The tip about freezing the mozarella ( 2:13 ) to make grating it easier is great! :) I don't use a knife to take out the core of the avocado ( 2:25 ), I just squeeze two sides of it above the bowl until the core comes out.

I was missing some ingredients, but just know... even without buttermilk for the dressing alongside substituting habanero jack for mozzaerella (to add a kick), it was awesome. The lack of buttermilk made the dressing thicker but it was fine. Thanks bro!

Used cilantro instead of parsley, Monterey Jack instead of mozz, and I sprinkled in a tsp of cumin on the chicken to give the whole dish a more Tex mex flavor. Step them up to a dinner dish by adding black beans and corn.

These look really good! Sadly I just threw out my sour cream last night so I can't make this right away :( but def on the to do list :) Pro tip with deseeding the avo though, if you hold the halved avo upside down with both your 3 middle fingers (so the seed it facing down) you can push out the seed with your thumbs from the back, that way you don't blunt your knives as quickly trying to whack it into the seed or risk cutting your fingers :)

@@VancouverJT "Yellow mustard" refers to the plain style of prepared mustard that's bright yellow with a slight vinegar note, not something like dijon mustard or English mustard. Yellow in this case is a noun, not an adjective. It's worth noting though, for this recipe, any mustard will do since it's being used as an emulsifier for the ranch.

@@aWildSyther hhaha agreed. 34g of fat per serving is actually kinda wild. I try to stay under 75g of fat per day so will limit myself to just one of these for lunch and perhaps double the protein. Chicken looks tasty enough to not need so much ranch

Like any veggie, it depends on how ripe you get it, if the avocados are firm, that means they need to ripen and will keep, so if you dont want to make this immediately, go for that, and wait until they are soft. So long as you don't open the avocado, it should be perfectly fine, and like all things including guac, it's not bad if it's brown, it just will do that when exposed to air.

Hi Chef! When using chicken breasts instead of thighs, do I need to put it into the oven after searing it or do I keep it a bit longer in the pan and let it cook in there? Thank you for the recipe!

Chicken breast cooks a lot quicker than thigh. If using Breast, sear it 3-4 minutes each side and remove and rest. Chop it up then continue with the recipe 🙏
