I've tried making the pickled carrots and daikon twice and each time they were not very good and smelled up my entire refrigerator. Is a strong smell normal for the pickled veg or did I do something wrong? Also, how long would you keep the pickled veg in the refrigerator?

Have you tried my specific recipe for it? But with that said, daikon is the culprit, it will 100000% smell like farts pickled!! A lot of folks will opt to just do pickled carrots or green papaya instead. I would say the pickled veg holds in the fridge for around 3 weeks
