I had 4 children and a husband to feed and back in the early 90's...there were days just before payday, when there was hardly anything left in the house for food. I was a stay at home mom and he controlled the money. It was awful, but i was thankful to learn how to make meals from nothing out of that experience. A day or two before payday, sometimes i had no meat. But i learned to keep lots of rice, pasta and flour/sugar on hand. And i always had cans of cream soup. So i would cook pasta, add cream of mushroom or chicken to the pasta and find hamburger or hotdog buns in the freezer and make garlic toast with those! It was yummy and my kids never knew we didn't have... Canned soups for the win!

Thanks to Mrs V, I got the courage to start dehydrating a fee years ago, then last year I started pressure canning. Here in newfoundland gas is about to hit 1.60 per liter again, food prices are soaring, we're on income support but we're in a better position than most folks I know.. sure we're struggling with bills, but of a sale happens we can shuffle a little and get the limit on the sale little by little and not be overly concerned about food. Also, we've cut out a lot of food waste too by doing this :)

I just stretched a meal a couple of days ago by adding a can of Cream of Chicken soup to some left over stir fry & a pint of my home canned chicken . It was pretty darn good !

I just did this challenge one Costco Rotisserie chicken how many meals. There are two of us. Meal one chicken teriyaki chow main, meal two chicken tacos, meal three chicken rice casserole ( we got one dinner and a lunch for two from this), meal four chicken udon noodle soup. Last is chicken vegetable soup. I have two quarts in the fridge.

It's so nice that Howard will eat veggies, they really help bulk up a meal and give it extra nutrition. He's lucky to be married to such a good cook. Both meals looked good. I'm wondering if there will be a garlic chicken pizza in this chicken's future? :)

When my kids were small I froze chunks of zucchini like that. Would add to things like that they’d get the Nutrients from it but not see it. I also used to mash cauliflower with potatoes for the same reason. ( long before mashed cauliflower was trendy) using up leftovers and adding nutrients.

I had some left over pork loin yesterday. So cooked up some brown and wild rice in my rice cooker. and stir fried cut up pork loin and a 1/4 of a bag of frozen Asian veggies with soya sauce and some plum sauce. Had 4 spring rolls in the freezer also from New Years and they rounded off the meal. Been not feeling well for the past couple of days. Caught a UTI, finally phone conferenced with my doctor yesterday and got some antibiotics. Been drinking lemon ginger tea and popping cranberry powder pills and ibuprofen for pain, which kept the UTI from getting worse, before I was able to get antibiotics. Yeah hubby cooked the small pork loin roast the day before because poor me was in pain n bedridden.

@@OurHalfAcreHomestead Have a small roast beast out for dinner tonight. I think I am going to dutch oven in the oven tonight, cause I can't be bothered with the crockpot. Yeah regarding the UTI. After 3 antibiotics, it is going away, so I may just take another days worth. The phone appointment that I had yesterday with the head MD at the place where my Nurse Practitioner is and not the endocrinologist who put me on this diabetic pill to go with my hormone shot. Well Bev this pill makes me piss like a race horse and can cause UTI, yeast infections and makes me dehydrated like crazy. Anyway bottom line is. The doctor yesterday took me off that horrible medication. And to monitor my blood sugar closely. Well no pill yesterday or today. No problems. Blood sugar 5.4 this morning and I don't have to pee all the time. YAY. I hope I stay that way as the time goes on.

Mom Bev! I need help! I keep screwing up chicken and dumplings, well the dumplings part. They seem to disappear! I roll them out and drop gently into the boiling chicken broth then cover to give time to cook. I come back and they are gone! I've got thick broth. I've tried cutting up canned biscuit dough, family wouldn't hardly eat them. They want "ol timey dumplins". Any suggestions as to what am I doing wrong? Last pot I wound up boiling wide noodles and threw those in so I didn't waste all the chicken and broth.

I love taking one chkn I roast and seeing what and how many meals I can get out of one chkn. I live alone so one chkn can last me a week. I end up with many parts. I cut each breast in half so I get 4 big breast sides. One a main meal with gravy pots. , corn, green beans n salad. 2 meal I use a hand full of pieces after deboning and make a fajita meal , using left over salad with corn left over corn in the salad to put on top of my fajitas. I end up with two. Now I have a lot of chkn left for meal 3 so I boil some noods and have peas in those with chkn gravy on noods with a chkn leg with thigh on top. . Now meal 4. I have chkn salad sandwich with left over veggies from meal 1. I still have chkn left. A leg n thigh. Meal 5 . I take the thigh ,shred it put taco seasoning on it and make a Mexican chkn chili to put over white rice. I make meal 6. I take my left over rice and make a fried rice stir fry with oriental sauce . with the meat off from the leg.and mixed veggies adding the left over peas. Now I still have the second breast of chkn left . I make meal 7 ,chkn enchiladas , a casserole of enchiladas . I use up any rice that’s left over in them, with some black beans and bake to melt cheese. I can freeze a couple of these. That breast meat makes about 5 enchiladas. This is 7 meals from one baked or rotisserie chkn I make on Sunday. But I live alone so I can do this. All I buy is the ingredients that go with my meals. You gave me great ideas my friend TY. I’m excited to see what I can do now with an average chuck roast now. Luv yas

You can always add the chicken carcass to a pot of water, add chopped carrots, onions, garlic, and celery. simmer 3 hours and you have a stock for soup.
