Potato tip: waxy potatoes don’t disintegrate, try some red potatoes or Charlotte potatoes. Maris pipers or King Edward’s are fluffy and will disintegrate so put them in at the end of the cooking process when the meat is done. Know your potato varieties!

Bro this looks banging. I’m the same with the potatoes. I cut huge chunks and leave it for ages (stirring occasionally so it doesn’t burn) the potatoes don’t even require chewing at that point. Just use your tongue against the roof of your mouth 😂😂

When you fry the potato with the curry before leaving it to cook it develops a hard outer skin/texture which helps it not break.

Please bro, cook your sices with your caramelising onions then add your meat , if put them in after they dont infuse the meat nicely and flavor your gravy...👍👍😉

Think that works well with pressure cookers. If you add it too early and cook for 2+ hours, they could overcook and become bitter

It's also about the type of potatoes you use. Anything too waxy will melt away into the curry.
