If you’ve never eaten beef cheek before, don’t be put off by it. Cooked slowly, they are delicious and flavorful. I’m blessed to have a market in the area that caters to the Mexican population, and it has the best selection of beef and variety of beef parts (“head to tail”) of any store I’ve found.

I'm 60 and on my all carnivore adventure since Feb 25th, 2024. I'm getting better every single week. And I started out extremely overweight, with multiple autoimmune diseases, PTSD and several health issues / brain issues due to an assault. After 5 decades of organic macro biotic vegetarian diet, I'm now going healthy again. Before I started with all carnivore diet, my daily vegan calory intake was down to 350-450,so I was literally starving while maintaining my weight! I was hungry for 5 decades, but now I'm not anymore and still lose body fat and gain muscles. 😊

What I LOVE is a great carnivore recipe (or better yet the ‘concept’?!) that is not trying to mimic a non-carnivore recipe. I was going to make a beef cheek stew, I’ll now add in the tails for the extra richness and try your idea of air frying them later, sounds intriguing! …and yes the bones will later go into a bone broth which has some ACV. Zero wastage, maximized nutritional benefits, fantastic!

Yes! I agree! That was a pet peeve of mine when I tried keto. Only did keto a couple months. Then I found carnivore. Boom! Instant love. I appreciate Anita’s channel too. She is the bomb!

Adding beef tendons from your local Asian market would be great if you can’t find beef cheeks or oxtails. I’m going to try this with beef ribs I have in the freezer.

I made 2 turkeys this Thanksgiving and I make gallons of turkey broth from the left overs. I used to call it soup but the vernacular today is broth. So soothing, relaxing and I just love it. Beef cheeks are super cheap and so very good. ❤

The good news after the second chemo the tumor was shrinking from 1.5 cm to under 1 cm aka it shrunk 600 mm in the diameter and the cancer knot is dissolving from the inside out too.😊

Hello! I've been diagnosed with Crohn's disease. I was on the SCD diet for quite awhile, then tried the G.A.P.S. diet as well. I'm doing as well as I can with the ketovore diet. All my protein is animal based and I eat 20-30 carbs per day. I have had surgeries and my colon is shorter, but all my other digestion is great on the ketovore diet. Thanks for the good meat broth idea.

To speed up the cooling down, I pour the hot broth into my biggest pot and put the lid on. Then I put it in the sink and fill the sink half way up the pot. When the water is warm, drain it and replace with cold water again. Stirring the broth in a cold water bath cuts the cooling time to minutes instead of hours, and then not putting hot things in the fridge.

I keep laughing at myself because the longest time I couldn’t figure out the difference between meat, broth and bone broth. I finally had to Google it to get a solid answer in my mind. I’m just gonna think of meat broth as soup.

Ahhh.. we grew up on meat broth! Osso buco (or beef shanks bones) that's what my mom would use. When I need a good broth, and I don't have marrow bones... I go for any beef bones I have in the freezer. My last batch was a beef short rib (a big one) and beef shank bones ... meat on... fat on... all really good!! I roast everything first.. gives a wonderful depth of flavor in my opinion.. and then... slow cooker. I'm afraid of the pressure cooker! (hee-hee!!) Thanks for sharing, Anita! Informative video! PS -- I bought that book in 2022... I need to read it!!! 🥰

I grew up fearful of pressure cookers, due to an accident my Dad had with their pressure cooker with the lid failing and denting the ceiling. Many years later, I was determined to try the new Instant Pots and I never looked back- I use it several times a week for various recipes. Definitely going to try to find beef cheeks and ox tail.

I use beef cheeks for barbacoa. The one I get here in South Texas is usually fattier than the one you're showing. So, I slow cook it with a chuck roast.❤❤❤

Honestly, it's more about what you are NOT eating. Clean all the grains, sugars, processed foods, seed oils out of your pantry and eat single ingredient whole foods. Start with that and then you can tweak from there!

Thanks for demonstrating how to make meat broth. I absolutely love oxtail. Also, thank you for introducing Dr. Natasha Campbell McBride to us (and her book), and mentioning the Gaps Diet. I've never heard of it. I'm definitely going to buy the book as I am dealing with autoimmune issues. Can't wait to read it. I'll watch the video of the doctor and Kelly Hogan. Meat broth can have lots of bones in it too, I take meat off and then keep cooking the bones n bits/skin for hrs. Use vinegar too to leach the bones Chicken wings n feet make best broth, very thick. Drumsticks are good too. I don’t buy chickens do I can’t backs n necks. I might buy thighs but we eat the meat off the bones so can’t use them. I can’t afford beef besides hamb and the rare chuck roast or ribs. Roasts n ribs don’t have bones anymore even 🤦‍♀️ So I have poultry broth 🤷🏼‍♀️

Thanks for all of your ideas and videos Anita. We had 2 turkeys for thanksgiving and so I made a couple gallons of broth. It didn’t get very gelatinous though…(tried to keep on stovetop on low at 180 degrees for 5.5 hrs ) but anyway it is delicious and I’m using it plus butter and salt as a morning drink to try and quit coffee (and all the party stuff I put in it 🤷‍♀️❤️). I got this idea from when you started lion diet. Thanks again!

I’m a big fan of meat broth and I’m not a fan of bone broth. For me the taste is why I prefer meat broth but now I don’t have to feel like I’m cheating not drinking bone broth like everybody else. I save all my broth from anything I cook. Chuck roast and ground Chuck are what I mostly use to make broth as well as chicken wing broth. So soothing and comforting to sip.

i never knew about meat broth, i thought for the best bone broth was raw bones versus cooked leftover bones. so thank you for clearing up my misconceptions. not sure where to get beef cheeks. i’ll start looking at meat markets

Thanks, Anita. I had no idea that a reaction to bone broth was common. It bothered me to the point where I couldn’t stand the smell of it cooking on the stove. Beef broth is a good idea to replace it with the right type of meat. I actually boiled some lamb ribs (which I then air fry), and the broth is delicious. I don’t know if it will gel, but yummy nevertheless. ❤❤❤

I ordered ox tail for the first time, finally. Thank you for reminding me that the meat broth is more kind on the gut. I have been making bone broth, but I have been thinking it doesn’t always do well by my gut. Is the common problem with bone broth loose stool usually? Daily Endurance Keto electrolytes has 380 mg sodium so it is lower in sodium as LMNT but the potassium and magnesia is the same amount and it has 30 mg calcium. I usually add the bottle medium mineral water, a scope of bulk electrolytes and salt in a carafe half a liter and 1 stick Daily endurance. To keep it from overflowing I add a splash of the bottled mineral water into the bottom of carafe the the Daily Endurance Keto electrolytes and the salt and the bulk unflavored electrolytes the fill it slowly to the mark. When I use my 2 liter bottle I up my electrolyte ingredients and the salt.

A few days. If you make too much you can freeze it in jars or in a muffin tin and then pop them out to store in a large ziplock.

Im from Greece...I have a real problem finding tender beef. Which is probably healthy, but difficult to chew. I bought osso bucco and some stew beef today and will try the beef soup tomorrow. Then I can use the bones for Bone Broth. Pricier here, but I enjoy beef. Very helpful video!

If you have mostly tough beef then a slow cooker or a Dutch oven or an instant pot is your best friend!

There's nothing out there quite the same as beef cheeks but to make the meat broth ANY meat will work. I do it with ribs, brisket, any types of meat that need tenderizing with a pressure cooker is perfect!

A butcher should be able to get these things for you. Yesterday I made a fresh batch of meat broth and all I had was beef ribs. Ribs work great for this as well! Any fatty meat.

I make bone broth for my doggo. He loves it. Bones, apple cider vinegar and water to cover. Simmer for 24 hours. Will try your meat broth for me. 😋 🇦🇺

I am making the meat broth now. I am one of those people who could not tolerate bone broth. Because I am cooking the broth on the stove, I am not sure if I can still eat the meat after I cook it for about 8 hours. Thank you very much.

Hi Anita, though my meat broth tastes delicious, and I followed your instructions with the video to the T. My broth was not gelatinous. Why does this happen? I have been making bone broth with success in the beginning. It was coming out very gelatinous and then all of a sudden, I haven’t been able to get the wiggly stuff. Just pure liquid. I must be cursed. Lol. Admittedly, I could not find beef cheek, so I used chuck. Any suggestions??🤷🏽‍♀️ thank you in advance. I so appreciate you. You have the best recipes ever!❤

Oxtails are the real secret to gelatinous broth. So maybe more oxtails, less beef? Chicken feet will do it too if you can do chicken. Or chicken wings too.

I'm wondering if searing the meat beforehand would add some flavour. I've not used these cuts before, so maybe it wouldn't make a difference, but I usually sear for the mallard effect.

I don't understand why bone broth would be harder to digest??? For meat broth I just cook for a few hours and save the bones to put n the next bone broth. I cook bone broth on the stove or in a slow cooker for 48-72 hours. That way there is lots of calcium in it. I mix all sorts of bones and meat if making beef broth. I just did beef and chicken. Yum.

If it works for you that's great. There are more histamines in bone broth and if you have leaky gut bone broth that's cooked for a long time contains a lot of glutamic acid, which can make it difficult for people with leaky gut or other health conditions to tolerate

oh i forgot- just like some people did not know that meat broth was easier in the tummy then bone broth, so I have a question for collagen. Collagen tears at my stomach is there maybe I don’t know better quality call than others to try? I also cannot do liquid MCT oil it also tears up my stomach, but I found I could take pill form.

I do not do store bought collagen or MCT oil for those reasons. It will always be easier on your tummy to get collagen from the meats and the broth. This is why fatty meats are the best when choosing meats, they also are higher in collagen.

You are kidding right? Beef cheeks are so soft and delicious when you braise them. I would never waste them on a broth!

I'm not wasting them! I cut them up and eat them in soup and/or stew for days after. You are right, super tender!

I wanted to do 30 days of lion diet in October to see if I could reduce inflammation even more. I ended up doing 60days and will be starting a 90 day lion challenge in January so no point in bringing back the coffee now!
