Transglutaminase: You were close, it rhymes with "maze" or "mace" depending on your version of English. For anyone curious, it is an enzyme (a protein that causes specific chemical reactions to happen faster) that increases the rate that two particular enzymes, glutamine and lysine, stick together in other proteins. It works as meat glue by causing the proteins in meaty bit A to bond to those in meaty bit B, and those chemical bonds hold the entire thing together. Nothing Frankenstein, still 100% edible and non-toxic, just a slightly different form. (The other two ingredients are maltodextrin, a simple starch, and sodium caseinate, a salt of casein, or milk protein, used as an emulsifier so that this stuff can work with fatty meats, most likely.)
