Ingredients:
- Beef Brisket - roughly 500/600 gr.
- 3 Garlic Cloves
- 2 Organic White Onion or Brown Onion
- 6 Tsp Brandy
- 2 Branches Rosemary
- Salt
- Black Pepper
- Extra Virgin Olive Oil (evo)
- Foil
- Baking Paper
- Tray
Method:
- Thoroughly salt the meat on all sides and let it rest for at least an hour.
- Pat dry the meat on all sides
- Sear the meat with Oil then put aside.
- Using the same pan, add some more oil and caramelise the onion & garlic, then put aside
- Deglaze the pan with 6tsp of Brandy for the "Jus"
- Place foil & baking paper on a tray
- Lay the meat, onion, garlic, rosemary, jus, evo & black pepper and wrap it all.
- Place in the oven at 140C and cook for 3.5 hours.
- Let it rest out of the oven for an hour.
- Shred it all, mixing with it's own juice
