Texas Style Brisket has never looked, smelled or tasted so good. Chef Tom demonstrates how to trim a brisket and then employs the Yoder Smokers 20” Loaded Wichita Offset Smoker to cook a tremendously tender, superbly smoked full packer brisket, using butcher paper for maximum moisture retention.
With a 14-hour low and slow cook time and a straightforward salt and pepper seasoning, this Texas Style Brisket Recipe is all about patience and simplicity. Congratulations, you are the first chef to explain good and complete with details, tips, etc all the process, you don't skip any step, from clean, cut, season the brisket, put the fire in the smoker, say the times of the cooking, etc, you are a REALLY GOOD CHEF and a you're be the BEST TEACHER CHEF in the world, a have a little smoker for almost a year , your video is all need to try a cooking a good brisket. Wow, I'm amazed. This brisket looks and probably tastes incredibly good. I'm from Brazil and we do have a pretty strong barbecue culture, our local meat is good, etc, but this Texas style really got me, very different . Thanks for presenting it in a such a beatiful way, you're talented as a cook and as an instructor.

That looks absolutely amazing. This made mine and my son's mouth water! He looked at me and asked if I can try to make it lol. I recently got a Traeger grill and have been looking for different techniques to grill/ smoke. I will definitely be looking at your channel for more tips. Great looking Texas style brisket Tom. The meat that I cook on my Wichita is better than most BBQ places here in Central Texas, so I know that brisket tasted excellent. That rub had some really nice color. I could almost smell that brisket cooking!

First off, thanks! We've had brisket at all the big restaurants, and none of them were this good when we had them. It does help that we were only cooking a single brisket so we could pay attention to it, but still... also, this rub is ridiculous. It goes on all our beef cuts now! Thanks for watching brother!

No gimmicks and guff’s or constant pop up’s and advertising. No promoting 1,000 different social medias…. Just straight too the point with great narration and amazing cooking skills my friend. And I totally understand KZbinrs need too promote themselves and contain adds too financially help themselves and their page but i will literally come across videos where the first 10 minutes is promoting themselves and their merchandise. For example… 15 minute videos with 5 minutes of actual content is OVERKILL. This man right here got straight too Action with some damn good skills and narration. From a born and raised Native Texan I strongly approve this brisket right here baby damn good cooking and content. Sorry for my mini rant 😂 …but keep up that ass kickin cooking !

Famous Dave's rub sucks. It has anti caking preservative crap in it. I use a shaker with kosher salt and course black pepper. I saved money doing this and works great on all my bbq

I'll talk shit cuz I've done several backyard briskets & I'm from Texas. This ain't "Texas style". Sure, you can season anyway you want but if it ain't traditional salt & pepper it's no longer "Texas style". The reason for the simple seasoning is because you're trying to get the beef flavor to come out on top instead of a bunch of other flavors. I've had brisket with other rubs & sure they tasted great but once again, Texas style is salt & pepper.

Went down to Bastrop this past week to set up our deer blinds. Stopped by a bbq joint and had some nice bbq. Brisket, Sausage and Pork steaks. With mac & cheese and potato salad on the side. And of course plenty of white onion and pickles to go along with it. With two slices of bread and an ice cold Coke, nothing beats it!!

Barbecue in Texas is vastly different region to region. Central Texas barbecue is by far the best and typically only uses kosher salt and coarse ground pepper in a 50/50 mix. There was also no mention of the type of wood used. Oak is the go to and some will even use pecan as well.

Agreed! Texas is a big state and depending on where you are depends on how it's done. I'm from Houston and we use mostly mesquite. The type of wood was dependent on the type of trees in the area. That's why central Texas uses Postoak, western Texas you'll find mostly hickory. So all these people saying that Tom's Texas style brisket is not Texas is just flat wrong. im from brooklyn so by no means am i an expert on brisket but shouldn't it have more bark or is that sort of a preference when making briset? most briskets I've seen look more charred on top or whatever the correct terminology is

It was fine imo. I could have gone for maybe a little darker, but I find a lot of people have a bark that is way too dark because of an overfilled and choked off fire box that doesn't really burn clean.

This looks awesome. I'm in Dallas so this brisket looks right!. I smoked a brisket this weekend and it turned out very similar. I don't get the whole "sauce on brisket for competition" thing. Sauce is for pork! Salt/pepper/garlic only on a brisket and let the smoke roll!

Yup, smart price sausages, pre made burgers full of gristle and god knows what for fillers and chicken that's pre marinated in the same boring old Chinese style rub, if they're feeling adventurous some un seasoned pork chops and braising steak. Everything grilled straight over paraffin soaked instant light charcoal within 2 minutes of lighting it because "real smoke barbecue flavour" and burgers flipped every 30 seconds because nothing says "I'm the BBQ master" like making flames. Serve on Warburton's pre cut rolls because they're the only ones small enough for the pre made burgers that shrunk by 50% when the fat ran out during cooking and cover in ketchup to add some moisture and mask the taste of cremation. I usually have my invite revoked when I ask "are you having an actual BBQ or are you just gonna set some meat on fire?"

Nah...only in peasant's barbecues........ I cooked a brisket a couple of weeks ago that turned out perfect. There's a 7.5Kg brisket going on at 4AM this Friday for Saturday evening. I just wish that we had the weather to cook outside everyday!

Great! I cooked some brisket recently for the first time, only because my husband couldn’t find stewing meat. And, because I’m not a fan of fat, I pretty much removed most of the fat, which was half as much as the remaining meat. It took three and half hours to stew, and it was lovely. I’ll have to try this bbq method. Thanks for this recipe.

In Alabama, we baste the meat with an equal parts white vinegar and water solution. After removing the meat from the smoker, we submerge it in a pan of homemade sauce, cover it with aluminum foil and put it in the oven for 30 minutes at 500° F. This works for pork ribs too. Just make sure you separate the ribs with a knife before submerging them in sauce.

Although Grass- fed beef is going through a renaissance right now. Most of the US beef is grain finished. GMO too. It fattens them up big time. In fact, the cow is on his way to getting so fat and unhealthy he will soon die. Thats what the feed does to him. (and us) Just before he dies from being fed at the confined industrial Pharm he is butchered. That's the best way to make the beef tasty for our spoiled palettes. Far from green pastures like you would like to think. Its sad, but I gotta tell you, its good tasting.

I work for Hard Eight BBQ based out of Stephenville (though I'm in the DFW area) and we don't do any of this. We throw our brisket on the pit untrimmed and unseasoned and smoke it for eight hours (4/4) over mesquite coals before seasoning with a proprietary blend of onion, salt, pepper and garlic. After that, we wrap in foil and finish with another hour or so before they're pulled to the pit to be trimmed of fat and served. This looks incredible though.

Very few restaurants in Texas use only salt and pepper. That's a marketing gimmick, but you'll find onion, garlic and other flavors in their rubs + Worcestershire is commonly used as a mop or spritz.

No music-just step by step instruction--Love it !-- hear so many guys on these videos saying to use prime but I personally have had great results in using choice--How about you other guys?--I have noticed that most guys do trim off the sides but I watched myron mixon do a tutorial on brisket and he says not to trim the sides so it will hold in more moisture--I admit I usually trim the sides but I am going to try his method on my next cook--He says to trim the excess fat and the sides after the cook--What do you guys think about that ?
