Smoked Brisket Macaroni and Cheese is my favorite side dish. This smoked mac and cheese recipe is so hearty that it could even be a main course! There are many ways to make mac and cheese. In this recipe and video we add several smoked elements to the dish, plus add a toasty, buttery crunch element at the end that really completes it. This is a 4 cheese mac and cheese that uses my secret ingredient, smoked cream cheese! You can use your favorite cheese for the other 3 cheese, but the smoked gouda, sharp cheddar, gruyere in this recipe are excellent. Bonus, everything including mac and cheese is better with brisket!

Great video Matt! I have done Mac & cheese on my Traeger before but nothing like this. Being from Nova Scotia, I usually add lobster and scallops, but I’m going to try brisket. Your smoked cream cheese idea sounds very enticing. Keep them coming! Hope you had a great Easter.

Good recipe! No roux or eggs needed if you melt in some cream cheese! The only changes I would have made is to use whole milk instead of half and half (there is *plenty* of fat in the cheeses), only a half a package of cream cheese and seasoned traditional breadcrumbs (properly toasted on top) instead of tasteless panko for the topping.

I might take that a tad further and put that in the oven under the broiler for a few minutes after pulling out of the smoker. Very nice though! Gotta try it!

Great video Matt. I have done mac and cheese on the smoker many times. Have tried a couple of different recipes over the years. Yours sounds great. As an alternative to the panko I have used crushed up Cheez It's as a topping and it adds another layer of flavor and texture. Can't wait to see the carnitas recipe.

I do smoked Mac and cheese at events. My secret to awesome toasted breadcrumbs is to pre toast them on a sheet tray and take them with me. It’s easier to keep adding a little milk or butter to the pans of Mac and cheese on the smoker to keep it creamy and then sprinkle the bread crumbs on during the last 15 mins before I serve.

My daughter's boyfriend recently said "I've never had brisket", so clearly I now have an excuse to make some. Now it seems I'm gonna have to save a little extra to make some Mac and Cheese with. I'm thinking this would be pretty good with some pulled pork BBQ as well.

Not sure if I’d let someone date my daughter who hasn’t had brisket! Kidding. But yes with pulled pork it’s amazing. Idk if it’s as good as it with brisket though since I haven’t had brisket Mac. My wife makes a killer home made Mac n cheese when I grill steaks and we usually add one of the extra steaks to the Mac and it is so good! Different flavor with the steak than the pulled pork but they’re both killer!

I used shells (par boil 6 mins only) for more cheese coverage and went with the suggested 3 C of H&H. Traeger w/post oak and pecan. Briefly thought of offering some to the grands who live off of the box stuff....nah. I may eat it all myself.

Mac and cheese was one of the first things I smoked when I got my smoker. Smoke a peach cobbler to go with it... Oh yeah. Be careful. If you get some on the top of your head your tongue will beat your brains out trying to get to it.

Looks awesome, Matt. I make my Mac and cheese with the same exact ingredients. The only thing I do differently is I make a roux. With the half and half. Then, add the smoked cream cheese and smoke the mixture for 30 minutes or so. I don't use hot sauce, but I finely chop jalapeños and add to the mixture. The jalapeños are also presmoked. I also sprinkle your Meat Church Holy Voodo on top of the panko before I put it back into the smoker for final cook. Friends and family say it's off the charts.

Hell yeah. I usually incorporate rub into the panko topping, gives it a nice color. That and a poblano with some bacon if I didn't have brisket frozen

Well we tried this over this past weekend, we really liked it the only thing is for us it was a little dry. Next time will have to make more moist, plus i think i put to much Gruyere. But we will be doing this again, and making the adjustments that we thought of. Thanks Matt 😊

Wife was gone over the weekend and I had some leftover brisket so I made a quick version of this which turned out pretty good ... wish I would have gone full blown on it, but it was a last minute decision. I ate the entire cast iron skillet full of it. Shame on me. Full disclosure, over two meals 🙂. I do all of the cooking in our family and I make a hell of a mess every single night. Thanks Matt, I will add those cheeses next time, great idea.

Tip: If you can get Brother Bru-Bru’s Hot Sauce it adds a really great Smokey kick to the Mac and cheese! I didn’t time it right and had to smoke the cream cheese and the half and half separately in the smoker then mixed together after smoking. Still turned out amazing!

Haha. Glad you said something during the video. I was going to give you a hard time about leaving all that "yield" behind in the pans. I started salivating when you pulled the cream cheese off and still am. I can't do basic M&C. Has to be notched up. This is several notches up. Dude, you have me hooked on using panko in new ways, too. I started getting all kinds of ideas after the egg video (although I couldn't talk the wife into letting me fry the whites for easter, LOL)

Yesterday I made this recipe and used my Pit Boss vertical smoker to smoke it. The results were excellent! I used brisket from the local Harmon's BBQ. I made a serving to welcome a new family to the street and one for a guy who had just come home from the hospital. The portion we had was gone in one sitting. I'm going to be making your shotgun shells next.

That looks insanely good! BTW I made your Dr. Pepper Chicken...excellent! I tweaked the BBQ sauce a bit and my family was blown away! They suggested I bottle and sell it! Thanks for the base recipe! I don't think I will be buying anymore BBQ sauce except for maybe a bottle of that whomp sauce here and there.

Just when I thought I reached the end of Mac-n-cheese recipes you come up with a new one. The butter in panko is genius for the crust. Smoked cream cheese for the extra smoke. I look forward to making this recipe.

5:35 You also wanna shred your own cheese because pre-shredded cheese tends to be coated in a fine layer of cellulose to prevent clumping, and if you try to make a sauce with it instead of coming out smooth your sauce will have the consistency of runny mashed potatoes. Not good.

Bagged pre-grated cheeses have an anti caking agent so they don't melt as smoothly and your cheese sauce will have a grainy texture, that's why when making any kind of cheese sauce you want to grate your own.

This looks fantastic. We don’t cook Briskets that often but I can see this with pulled pork. This will be in our future, my wife will need a cheat day from her weight watchers, there isn’t enough “points” in the world to cover this! 😳😂🤣😂 Keep the after spot, it always adds good info to the video’s!

First off, if you are looking to hire a taste tester, I'm available. Lol... This looks amazing man. I'm a big fan of the sides. My three favorite sides are mac n cheese, baked beans and slaw. Lastly, I'm enjoying the wrap-up videos. Getting those compliments from family is gold. One of my sons will only eat the bacon that I home cure. My youngest gets excited when I make it. Again, those compliments from family are gold. I even made about 80 pounds of bacon a couple of years ago and took it a homeless ministry in Trinidad Colorado. They loved it as well. Keep up the great work man. These videos are always a good part of my Wednesday's.

How are you liking it? I've been debating getting one. I currently smoke meats on my Slow n Sear 22" kettle and I get decent results at best.

@@ryanp6999 Absolutely love it. Went with the pro 575 for roughly $800. I use it every other day and could not be happier. Easy set up, easy clean up, control it from your phone, great bark & smoke flavor, what's not to love?!

Everytime I cook a brisket I vacuum seal a big chunk from the flat and the point for easy fast dinners and Mac and cheese is definitely one of my favorite meals to use brisket. I will have to incorporate the bread crumbs next time for sure!!! Keep up the good work, love how informative your videos are!!!!

Incredible! Love it. We do a similar m&c. I’ll have to add that cream cheese. Only thing is I only use the skillet for all, except the Al dante pasta. Great looking Mac n Cheese.

My wife has made Mac and Cheese with smoked gouda and apple slices before and that little bit of smoke really added a different component to the dish. This is undoubtedly on another level. Added to my list of things to make. Looking forward to it Matt, thanks for the recipe.
