Wife was gone over the weekend and I had some leftover brisket so I made a quick version of this which turned out pretty good ... wish I would have gone full blown on it, but it was a last minute decision. I ate the entire cast iron skillet full of it. Shame on me. Full disclosure, over two meals 🙂. I do all of the cooking in our family and I make a hell of a mess every single night. Thanks Matt, I will add those cheeses next time, great idea.

First off, if you are looking to hire a taste tester, I'm available. Lol... This looks amazing man. I'm a big fan of the sides. My three favorite sides are mac n cheese, baked beans and slaw. Lastly, I'm enjoying the wrap-up videos. Getting those compliments from family is gold. One of my sons will only eat the bacon that I home cure. My youngest gets excited when I make it. Again, those compliments from family are gold. I even made about 80 pounds of bacon a couple of years ago and took it a homeless ministry in Trinidad Colorado. They loved it as well. Keep up the great work man. These videos are always a good part of my Wednesday's.

Haha. Glad you said something during the video. I was going to give you a hard time about leaving all that "yield" behind in the pans. I started salivating when you pulled the cream cheese off and still am. I can't do basic M&C. Has to be notched up. This is several notches up. Dude, you have me hooked on using panko in new ways, too. I started getting all kinds of ideas after the egg video (although I couldn't talk the wife into letting me fry the whites for easter, LOL)

I do smoked Mac and cheese at events. My secret to awesome toasted breadcrumbs is to pre toast them on a sheet tray and take them with me. It’s easier to keep adding a little milk or butter to the pans of Mac and cheese on the smoker to keep it creamy and then sprinkle the bread crumbs on during the last 15 mins before I serve.

Looks awesome, Matt. I make my Mac and cheese with the same exact ingredients. The only thing I do differently is I make a roux. With the half and half. Then, add the smoked cream cheese and smoke the mixture for 30 minutes or so. I don't use hot sauce, but I finely chop jalapeños and add to the mixture. The jalapeños are also presmoked. I also sprinkle your Meat Church Holy Voodo on top of the panko before I put it back into the smoker for final cook. Friends and family say it's off the charts.

Just when I thought I reached the end of Mac-n-cheese recipes you come up with a new one. The butter in panko is genius for the crust. Smoked cream cheese for the extra smoke. I look forward to making this recipe.

Good recipe! No roux or eggs needed if you melt in some cream cheese! The only changes I would have made is to use whole milk instead of half and half (there is *plenty* of fat in the cheeses), only a half a package of cream cheese and seasoned traditional breadcrumbs (properly toasted on top) instead of tasteless panko for the topping.

Everytime I cook a brisket I vacuum seal a big chunk from the flat and the point for easy fast dinners and Mac and cheese is definitely one of my favorite meals to use brisket. I will have to incorporate the bread crumbs next time for sure!!! Keep up the good work, love how informative your videos are!!!!

Well we tried this over this past weekend, we really liked it the only thing is for us it was a little dry. Next time will have to make more moist, plus i think i put to much Gruyere. But we will be doing this again, and making the adjustments that we thought of. Thanks Matt 😊

Yesterday I made this recipe and used my Pit Boss vertical smoker to smoke it. The results were excellent! I used brisket from the local Harmon's BBQ. I made a serving to welcome a new family to the street and one for a guy who had just come home from the hospital. The portion we had was gone in one sitting. I'm going to be making your shotgun shells next.

Now I know what my mac n cheese has been missing. Gruyère. Well, and smoked cream cheese. One thing I’ve done with leftover brisket is cut it into small chunks and pan fry it in brisket tallow to get it crunchy then toss it into fried rice. That’s what I’m gonna do with this recipe. Thanks, Matt!

I mixed all together and smoked at about 250 for about 90 minutes, and then a higher temp to get the top to crust over with left over brisket.......O....M......G. Great recipe!!

I used shells (par boil 6 mins only) for more cheese coverage and went with the suggested 3 C of H&H. Traeger w/post oak and pecan. Briefly thought of offering some to the grands who live off of the box stuff....nah. I may eat it all myself.
