Smoked Chicken with Alabama White Sauce
Alabama White Sauce was made famous by Big Bob Gibson's in Decatur, Al. The acidity pairs great with BBQ and the mayo acts as a moisture barrier especially with poultry. This is not a real common sauce that a lot of people have tried, and this recipe is my take on their classic sauce. Trust me, you have to try it!

Alabama white sauce is the truth. Haven't had Chris' but it's a bucket list item. I've had others and wasn't mad about it. Made my own once a few years ago and it was ok. Perhaps I'm due for another attempt.

Order a copy of Big Bob Gibson's BBQ Book. It has a recipe for white sauce in there that's really good. You can find a used copy for under $10 online.

Question. I've seen this in other people's videos. But why do you have a piece of wood on the grate by the chicken? Everytime I see it it's always on the side with the off set like its blocking the meat from the heat.

I just made two whole smoked chickens with a pellet blend of hickory, apple, and maple and put them in this sauce right off the grill. AMAZING. I’m from Canada and never has meat like this. I blew my own mind.

Just made this for Mother's Day yesterday. Do not hesitate to make this, folks! It was really good. The chicken was awesome with just the Holy Cow. But, the addition of the white sauce and the creamy, peppery, and vinegary tasting notes pushed it over the top. I would definitely make it again. One more thing, I only made a 1/4 quantity of the sauce for the bird. It was plenty for just one chicken. Not everyone in my house wanted the sauce, so we served it on the side.

I worked in Decatur, AL multiple times the 1990's and early 2000's and I ate at Big Bob Gibsons way too often. Sure do miss it and now I can try to replicate those memories and flavors at home here in Texas! Thanks!!!! I followed you Maple Bourbon Turkey recipe for Thanksgiving this year and it was a HUGE hit.

Cooked a slightly altered version of this tonight turned out great. Only swapped out the rub used for a local one in the sauce because I didn't have it on hand. Other than that followed it pretty close. It turned out great. First time using an Alabama white sauce. Very good.

I love your videos. By the way, I was just in Your town. We were camping in Ennis. And I grew up near Big Bob Gibbons place. Folks, let me tell you. You got to try the Alabama white sauce. Texas got the Brisket. Memphis got the pork. But Big Bob’s in Alabama is number one when it comes to BBQ chicken

Unpopular opinion: I take my chicken to 170° internal temp because it provides a better texture, and if you do it right it will still be crazy juicy

We have a similar recipe up here in NY state, Cornell style bbq chicken. But you marinate the chicken in it and baste it while it's cooking, can't dip it afterwards because there is raw egg in it (I use a little mayo instead, it sticks better). Best results are on an open pit. Every firehouse and church bbq in the summertime uses the same recipe. Chicken, baked beans, salt potatoes, and a soft roll with a pat of butter. It's sublime.

What the heck is “White BBQ Sauce”?!… Some kind of cheese/alfredo sauce? 39years on this planet, my first time hearing it. NW Indiana by the way. You can say Chicago to save mind-boggles. Ahh, mayo/vinegar… Coleslaw sauce. On your BBQ Chicken. Prefer the slaw on my BBQ Pulled Pork with real BBQ Sauce, but i like coleslaw.

So mayo is a tricky thing. I prefer Hellmans, and will only eat that. Others prefer Duke, and will only eat that. Heathens eat miracle whip. What does the original Alabama White Sauce use?

I’m new to smoking I followed this recipe why was my skin tough like leather when finished? The recipe tasted great but we had to remove the skin. I saved some of the Alabama sauce and made coleslaw out of it! Amazing!

I like and follow all of your Texas style smoking. However, this Alabama white sauce is the most gross thing I've ever tried. I did not enjoy it one bit. Just my taste bud opinion. I'm sure others might like it but not me. It was worth a try though.

I did 2 chickens yesterday I took some mayo mixed it with your gospel rub and holy cow rub to make s season compound lathered it on the chicken and oh boy were they good golden crispy skinned and juicy works with butter to but I prefer mayo on chickens and turkeys might be a newyork thing idk even steaks get a light mayo coat before the grill

I add a little fresh squeezed lemon say half if one and apple juice say quarter cup to what you use ,make it your own folks first time make it traditional then dial it in to make it your own.

Any suggestions on getting a crispy skin? Struggling with that part anytime I cook a chicken. Going to give this a shot. Little iffy on the Mayo but as you said, don’t knock it till you try it….

I would suggest searing it with a torch.

Only way to get crispy skin is high heat.

I actually coat my chicken with the white sauce and baste with it while grilling the chicken. I then reserve some clean white sauce to dip with. Has anyone done this with the white sauce?
