I refuse to bow to the “experts” on what type of grill/smoker I should or shouldn’t have. I use what works for me and allow everyone else the same latitude. Just be grilling and smoking...Darlington, South Carolina

I agree, I am sick to death of the term “push button BBQ” and it is usually from idiots who aren’t smart enough to actually turn on a pellet smoker. I have spent my years using my offsets and now pellet smokers and there is room FOR BOTH!! Smokin’ Joe (of course), Malcolm Reed, Myron Mixon, Harry Soo, Meat Church, Chud’s BBQ and countless others have all used and still use pellet grills/smokers.

Hi Joe! I can't stand eating chicken UNLESS it's smoked or fried. My favorite wood to smoke chicken with is mesquite. It's awesome! And have to get that skin crispy. I love chicken this way, any other way is southern fried. I can't eat chicken any other way.

Looks great...does the brine make a big difference in texture and taste? I've brined chicken breast but it came out a bit salty to me and with my health I need to be watching my salt intake. Thanks!

Maybe you added TOO much salt. Once you rinse, and add additional seasonings just make sure you forfeit premade seasonings that contain salt as well.

I use a five gallon water cooler, and I place the salt and other ingredients in a pan of water and bring to a boil then simmer 5 minutes, let cool then add to the cooler and stir the water then place chicken or turkey in. I use 2ltr bottles of frozen water and put on top to hold the chicken down and keep it cold.

so when you brine is the water faucet temp? then you place the whole container in fridge. Im always concerned about water temp until it cools down in fridge so i always add some ice to container to help get it cold until fridge brings temp down. Chicken temperature always make me nervous. Great video though, chickens look great.

Have you ever added sugar to your brine? The brine recipes I've read are always equal parts sugar and salt. I do this and the flavor is really good.

As of now I only have a Pit Boss, which really cooks well. I am going to build an offset in the near future, but for now it’s the pellet grill. My question is “do you think a guy can compete with a pellet smoker?”
