I just tried this recipe for the first time. I added cumin powder while I was cooking the mushrooms cuz cumin gives a meaty flavor. I also blended the oats in a blender to get a powder texture so that way I didn't have to use an egg to bind it. instead of parsley I added fresh chopped basil. i also added steak seasoning (vegetarian). i did not bake them instead I fried them in a little oil to brown them nicely. This is the closest thing to beef I've ever had. I'm in love with this new recipe. thank God for your talent sir! God Bless.

this recipe was an absolute hit. I made it for my birthday dinner. kept a few meatballs in a homemade red sauce and a few in a cheese sauce. served them with a side of sautéed garlic spinach. absolutely delicious.

If you want to replace the egg in the recipe, try adding ground flaxseed. It is often used as egg replacement in baking. It serves as sort of glue to hold things together, it doesn't cook like an egg does though.

I made these today. I used a larger scoop and I got 9 meatballs. I ate two with my meal. Paired them with spaghetti and sauce aka spaghetti and meatballs. OMG! Tasted just like Italian meatballs that you would get in a restaurant. Sprinkled on Parmesan cheese and it was on!! What a great recipe. Thank you so very much!

Technically parmesan isn't vegetarian at all since it contains traces of sheep stomach (yuck). Though personally I'm vegetarian (not vegan) and try not to worry about that too much.

Cyndal: I know you're trying, but you're probably not vegetarian or vegan yourself, or you need to educate yourself more, based on your comment. Vegetarians won't eat animals of any sort, meaning meat, fish or their industrial byproducts, or any other kind of creature. That means you also can't eat cane sugar that's bleached with bone ash, anything with gelatin because white bleached cane sugar uses bone ash from the hooves, bones and skins of dead animals, cheeses that use animal rennet (some cheese use a rennet cultured from microorganisms, instead), etc. Manufacturers can be sneaky: many "vegan" cheeses contain casein, which is dairy and cannot be eaten by vegans. McDonald's got caught years ago using beef tallow to fry their potatoes. Some industrial food manufacturers use animal products in their foods but call it different names. Body products can use animal products sometimes, so question the back label. I once had a customer rep from Knox Gelatin tell me she didn't think I should consider their gelatin to be an animal product because it was so far removed from dead animals... obviously fhey needed to do more training with someone that ignorant. She wasn't deliberately lying, she was just stupid and ignorant. I've even seen Huff Post do articles on all the vegan candies you can still eat, and many of the sweets used bone ash-bleached white cane sugar so, no, they aren't vegan or vegetarian. You have to be careful, some American manufacturers try to get away with murder while others are conscientious.

Chef John, I want to thank you for this recipe! I made one change, Italian seasoning instead of just oregano, and doubled the recipe for game night snacks for my largely vegetarian group of family and friends. This dish is delicious and so much better than the meatless meatballs that come in a package! I was so glad to find it. I'm not vegetarian, nor is my husband, but we all ate them like crazy and even our friend who 'hates' mushrooms, gobbled them up! I grew up farming. Chickens lay eggs daily...fertilized or not. Milking doesn't harm the cow. If the milk is not released, the utter sack will burst. Granted, huge corporate farming is cruel. But animals raised free-range are not suffering in the least. I suppose you could leave the unfertilized eggs to rot in the nest. After calves are weaned, you can let the cow dry up, but milking doesn't physically hurt. I do wish folks actually knew what they were talking about but being a parrot is fashionable these days...

trailer trash infidel It's not that doing those things is harming the animal, but rather that the environment that the animals are kept in for those purposes is cruel. Many of these farms keep their animals in tight quarters just as slaughter farms would. They treat their animals poorly and if an animal is born and isn't producing good products (or is male and cannot produce some of these products) where do you think they go? And where do you think they go once they have spent most of their life being kept in a tiny building filled to the brim with other animals? They either get killed and discarder, or are sent to slaughter farms. And also, a cow has to have had a calf in order to produce milk so they end up spending their entire lives being impregnated and then having their calf ripped away from them (unless they keep that calf to use the same way when it grows up) and then are impregnated again. If someone wants to buy a couple chickens so that they can give it a good life, and use it's unfertilized eggs then fine. There is nothing wrong with using animal products as long as you know for a fact that they are being well treated and aren't being used in a billion dollar corporation that only cares about making money. Free-range, as you stated CAN be humane as long as it's actually true. But companies will use terms that appear to seem as though the animal was from a humane farm while being complete BS. You have to be careful with labels and make sure it's accurate and not a way to make money.

cmdesaulniers as I stated, the industrial farms are not taking care of animals as they should. However, if you are able to purchase from family-owned smaller farms, you will find the animals are housed in clean facilities & actually have a "life". When I was a child there were around 1300 slaughtering facilities in this country, now there are but a hand full. People raised their own chickens in neighborhoods all over. We have somehow been led astray. People can take those things back with their dollars & by petitioning city councils etc. If you want things to change, change them. I have personally been taken to court for possessing 8 chickens, in the town I was born & raised in, where we had chickens etc., my whole childhood. I know what I'm speaking about & I'm at the forefront in trying to go back to what true normalcy is. This new normal is ill. Unfortunately, there are too many parrots who have no real clue as to what the soap-box they stand on is about.

I just tried this recipe for the first time. I did everything except I forgot to put butter in the pan when the water evaporated from the mushrooms. I could not figure out why they weren't browning so I put in a little oil. Sad to say, my mixture did not caramelize like it should have. I finished the rest of the recipe following it for the rest of the recipe. After they were done I tasted one and it still tasted like meat. They still came out better than I expected them to. The next time I make them I will be very conscious of putting the butter in and I bet they will come out like real meatballs. One or two of them did fall apart, but I didn't care because they were still very good. Thank you so much, Chef John for sharing this recipe with us. I love watching all of your videos.

if you are making These for a vegetarian make sure you get vegetarian Parmesan. Most parmesan Cheeses are Made with calf stomach rennet

Hi Chef John. I have tried many of your recipes and am pleased to say that I have yet to find one I don't like. Thanks for all your hard work, I hope you never run out of ideas. On a side note, I happen to be a vegetarian and don't understand all the comments from people about "don't try to fool mother nature" or "creepy gelatinous mouth feel". We all enjoy different foods, so if you find one you don't I believe Chef has about 800 other options for you to try. So to quote a wise man "Enjoy".

Well I made them and ate them with a red pasta sauce and spaghetti. Man are they good!! The wife loved them too!! With a forkful of sauce, noodles and "ball" one would be hard pressed to notice they were not "meat balls". Only when you would eat a piece all by itself would you notice something is not "meaty". Great recipe that I'm sure will be one of my favorites for a long time to come!! Thanks for sharing!!

I made these and they really are great! I also hate mushrooms but love these. Even my 7 year old loves these and doesn't believe that they are mushroom. Hell yeah! Thanks for the recipe John.

Made some of these today... very delicious! I admit, I used cooked rice instead of bread crumbs and added worchestershire sauce, and they tasted like I was eating Italian sausage instead of mushrooms. Definitely doing this again... but next time, I'm buying a splatter screen, as my mushrooms kept exploding out of the pan. Thank you Chef John for this amazing recipe!

I just made these tonight and loved them! I didn’t have time to let them sit/marinate and pretty much baked them immediately. They still turned out good flavor-wise although I’m sure they might be a little better having marinated. Will definitely be making again soon!

Not sure. Maybe use 1 tablespoon ground flaxseed mixed with 3 tablespoon water to make a substitute binder to replace eggs. There has got to be some sort of vegan interpretation for parmesan cheese at the grocery store, I would think. Same for the butter or use more oil.

Not on this recipe. The flaxseed substitution works fine. I have not progressed to using vegan cheeses yet. Still a lacto vegetarian.

You can use the Go Veggie brand of Parmesan. It tastes like Kraft Parmesan cheese.

I made these and they are SUPER! I did however bump down a bit on the Italian seasonings and used a Mexican blend of cheeses and for my sauce I made a stroganoff gravy. YUM!!

I tried this recipe last night. I used a food processor to mince the mushrooms. I didn't store them overnight. They were still very tasty! My guess is that chopping them very finely helped with the consistency.

As usual the food looks great, unfortunately parmesan cheese is not vegetarian, as it contains animal rennet, thought you should know.

Benjamin Powell in Austria, some cheese products are labeled vegetarian because they don't have animal rennet, your comments where correct :) You could use nutritional yeast :) or your own vegan parmesan (nuts, nutritional yeast, salt, pepper, garlic ;) ) Hope it helps :)

+Benjamin Powell Well there are many different types of vegetarians like some who eat also fish and eat dairy but then there are the very strict ones so I would say that you can consider it as vegetarian food. Strict vegans can use something else.

Benjamin Powell I know what vegans eat I have a friend who is a vegan. But some do not want anything that comes from an animal and some may actually eat those things but are also considered vegans.. I just meant to say that. heh... I mean if someone wants to eat super carefully like knowing everything it is totally okay. I also try to avoid dairy things myself... but I love cheese. I am not a vegan though but I think the people who are are super cool. I eat more veggies than meat. I also check what I put inside my mouth. I am careful with many things but yes you are correct and that is not what I meant to say. I did not try to offend anyone by calling some vegans ''strict'' I just thought it as a shorter word for what you just said. i did this to make or increase some of the flank steak i had for the supper bowl meal i had. My husband and his friends never knew they were eating a 60 percent mushroom and 40 percent steak sandwiches. I love it... No more cholestrol problem for him. I wouldn't have tried it if I had not saw your meatball. Oh, and we had those too.. He didn't know... Thanks

I don't usually comment...ever. But I have to on this recipe. I've made it about 7 times now and have wowed meat eaters and non meat eaters alike. Amazing recipe. Our favorite is to throw them in a mixture of grape jelly and chilly sauce. Yum!

well parmesan is made from calf rennet which comes from their stomach so don't cook this for vegetarians. if you do replace it with crumbled up feta.

In the light of this fierce discussion about vegetarians, vegans and eggs [and parmesan cheese, just saying]... I just like this recipe! I love meat! But I also know, that I am eating far too much of it... and I am not different of around 95% of all people in industry nations! Why not eating something delicious, where you aren't missing the meat component? I believe, videos like that are much more helpful than fundamental vegans! Cause veganism is only for a very small demographic, and basically most people perceive, that vegan [and often vegetarian food] has a taste between pet-food and dirt [or to say it in a less extreme - it is just not tasty]. I had some "vegan bangers", and while I totally liked the packaging, the bangers inside didn't tasted much different than the cardboard! Nobody will eat less meat, if this is the option! So... Chef John - I would love to see many more recipes, which are healthier, with less meat and in which you don't miss the animal protein! This would make the world a better place - little by little!

[ok - I said, with "less meat" - but I meant to say, that I rather see dishes, with less meat content]. You can pick a fight in some other comments I did in other videos. But here I am rather on your side [and I feel rather awkward, because you didn't got it]. Sochilinda You have options, you chose the path you took. Why come on a chef's site and bitch that he made food you don't want to eat? Go to a vegan/vegetarian site and hoover up all the lovely stuff they are cooking specially for you and others that made their choices. I am a Homo sapien, therefore I am genetically an omnivore, at the top of the food chain so I get to choose what I eat, all animals are not equal otherwise they would not get eaten by others, (and me) would they? Farming cruelty is bad and it is being improved but as long as we keep having kids and living longer we need food, fast. When a cow sits down and gives me the arguments for vegetarianism from its own mouth, trust me, I WILL listen!

PETA seems like a villain out of the Bond movie - they are saying, that they are against exploitation of animals (...) - but they are killing dogs and cats - because they think, that no animal should live in capture. The comments on this video just go to show exactly why the majority of the population will NEVER be vegetarian or vegan. All of Chef John's other videos are full of comments saying "thanks" or asking for ways to substitute different things. The moment he tries to appeal to someone who doesn't eat meat, you lot kick up a big fuss about cheese, butter and eggs!! There is no pleasing the Vegan community, so I (and many others) have long since given up trying and continue to enjoy slaughtered animals daily knowing that the people who are upset are self-righteous douches, makes me kinda happy :)

I am sure that any societal ill was taken down by people just not giving a fuck. you can see it all through out history kek. Any time something changes its because no one said anything. Not. Being politically active and pushing for a slow adaptation to a vegan diet can i not express it online as well? A meat based diet is unsustainable globally but you would not know that living in your comfortable decadent western country. The idea of "having the cake and eating" it too has never worked out and as it stands we put to much resources in growing food for the slaves we eat when the cheaper and better way is to grow food for the people. Also that is not the definition it's a meme credited to Albert Einstein yet not actually his own words. If anything is self-righteous and pitifully ignorant to assume that economically we can sustain our over priced consumer based lifestyle when the ecology of the world is collapsing around us. But i am sure that the people shouting for equality, clean energy, end to slavery and all other ills of that nature have always been confronted by blind deniers such as yourself telling them that "everything is fine, you shouldn't even try".

I love that you think that, because your message is being largely ignored by the masses, that it makes you just like the people opposing slavery and oppression back in the day. Never mind comparing black slaves to animals being incredibly insulting, but those who used to fight for human rights faced actual danger from conservatives. Violence, threats, ostracisation, the like. OMG!! These are delicious... especially if you mix ground beef with them. I did that and they were out of this world!! And if you add chopped pecans, you'll be in heaven. I first made it with just the addition of meat. Then, the second time I make it I not only added meat, but chopped pecans. What a delight! Oh... I left out the oatmeal and the breadcrumbs. I can't have that many carbs. Also, a small amount of cumin gives it a very meaty taste.

Just made this for my 2nd time tonight. Comes out super delicious. It honestly has the texture of meatballs with a taste of mushrooms. First time we did it as meatballs with pasta sauce and it was great! This time around we're actually gonna make them into patties and put them in the crock pot and make them into a "salsverry steak" type dish. Should be interesting, lol. Word of advice to those of you trying it for the first time, get some extra mushrooms. They reduce down more than you might think.

It always makes me laugh. All veggies give the rhetoric "oh I love being a vegetarian" rubbish but they will do their very best to try to imitate meat. It only a part of life friends, animals are there to be eaten. You don't cry when a plant sucks water up through its roots for sustenance so what's the problem with me tucking in to a portion of foie gras? That is only a source of energy too.

Your comment is wrong in so many levels. *water is not an animal that feels pain. *There are SO many energy sources that are not from animals. *Maybe theres people who liked meat but go vegetarian/vegan for ethical reasons, so theres nothing dumb about them trying to recreate a dish without the meat. *who the fuck said animals are there to be eaten?! I'm not vegan or vegetarian but I always like to try out meatless recipes just bc I know its not good to eat a lot of meat. I just made these and they're incredible. They really taste just like normal meatballs! And theyre pretty cheap to make too, I had all the ingredients already on hand. Im so impressed. I'm never making normal meatballs again lol. Also pro tip: if you have old fashioned oats just give them a few pulses in a food processor to make the pieces smaller, bam you have instant oats.

Made a double batch. I made one batch after only 3.5hrs of refrigerating, and the second one the next day - both had the same amazing results! The meatballs did not fall apart in the sauce. My husband said after his first bite, “so did you use beef for the meatballs?” These are also light on the stomach.

Tried them last month with Portobello Mushrooms and we all loved them! Some people thought they were really meatballs. Amazing.10/10 Chief !!!! They also make excellent hamburgers without any need to fry them (I am referring here to the hamburger recipe that inspired this one ). Merci Chef!
