There's a more rustic variant over here in Scandinavia where you make your meatloaf from wild boar, reindeer or moose and flavor it with rosemary, thyme, lingonberries (or juniper seeds) and serve with potatoes, sauteed mushrooms, and a sauce made from the leftover juices from baking the meatloaf, heavy cream, additional herbs, maybe some dijon mustard, and schallots.

If you don't have buttermilk just mix 2% with sour cream until you get the consistency of buttermilk then measure it out. Also using just normal 2% milk works as well but the sour cream helps get close to the taste buttermilk would provide.

If I don't have buttermilk I combine milk with a little bit of lemon juice and let it sit for about ten minutes until it curdles. I'm not sure how that would work for meatloaf though.

Growing up my mom would often make what she called "meat loves", which is just meatloaf cooked in muffin tins. Some would be glazed in ketchup, others bbq sauce so you could pick and choose. And they froze great so they made perfect after school/ sports snacks!

My mom always made a very interesting and unique meatloaf, but one i've always loved. It's ground beef and yellow rice mixed together, put in a loaf pan and made into a loaf (with cheese in the middle) glazed with storebought barbecue sauce. A poor man's meatloaf, you could say, but one i thoroughly enjoy.

This Meatloaf is Magical. I made a few modifications based on ingredients I had on hand. Standing in for seasoned bread crumbs was finely broken up two slices of sour dough bread. For the meat I used 1lb of 85-15 ground beef and 1lb of ground Italian sausage. The sausage contributed to some extra lovely tang. I went mini meatloaf style. Will definitely make it again. @@mprior93 Nah, some of us live near the English county of Worcestershire and have no problem pronouncing it... 😉 Place names are always a bit odd and don't necessarily sound as you'd expect. You'd expect Kansas and Arkansas to sound very similar if you hadn't heard them and had only seen them written down 🤷🏻♀️ If you know how "Jeeves and Wooster" is pronounced (correctly...) then you're nearly there. Just add "sheer". Easy when you know how. I know it's a meme these days, but a lot of people really struggle and sometimes it's painful to see them mumble around it.

I like to use chamoy in my glaze. Its a tamarind based chile sauce, if you're not familiar with it, that can be found in Mexican food aisles most places. A big bottle is pretty cheap and it goes well when used, in small amounts, in any tomato based sauces and such. Remember that tamarind is sweet so if you use sugar or other sweet things, use less of them if you're adding chamoy.

I usually add about 3 cups "cole slaw mix" (shredded cabbages and carrots) to my meat loaf mix, after I run it through the food processor until it's fine. I add a package of dry "sloppy joe seasoning mix", because its tangy saltiness counters the bitterness of cabbage. It makes a very moist, "healthier" meatloaf, that is quite tasty - can't really tell it has cabbage in it.

I use bigger pieces of onion, carrot and celery but roast them in the oven first to release their flavors and that way they won’t be too crunchy. I use bread crumbs, granulated garlic, eggs and a small can of hunts tomato sauce. I use the hunts tomato sauce on top as a glaze as well, it doesn’t need any help.
