You shoul consider moving your crossbows to the flanks or mixing them among your infantry (with infantry doubled up. Both systems allow you to flank their infantry and provide a target for you to continue to attack (post engagement)

Hidtorically, the Kingdom of Jerosalem was destroyed by Saladin, and the Third Crusade had them alost retake it, but they didn't. The Principality of Antioch ended up falling back to Rhodes, and eventually Malta. I don't think you need to worry about the Turks.
