Thank you Bill! Notes for future reference: - Cookbook: Foods of Crete - Recipe: beef with eggplant & herbs - Cook eggplants, zucchini, onions in olive oil - Sauté and simmer meat in olive oil in separate pot - Once veg are cooked down, add tomatoes, fresh mint, sage, thyme - Add meat with water and olive oil to veggies - Let cook for a bit. Done! - Greek salad: tomatoes, red pepper, cucumbers, slices of red onion, cubes feta cheese, Greek olives, oregano, olive oil, balsamic vinegar/lemon juice/red vinegar/white vinegar - Good olive oils: Costco Kirkland, trader joe’s, California

I would like to thank you from the bottom of my heart for doing what you do and making these videos !! I genuinely mean this. I've been struggling with differemt "healthy" diets since the removal of my gallbladder and this seems very appealing to me as I adore the Mediterranean lifestyle and style of cooking. I went to culinary school collectively for 3 years and one thing I enjoy cooking more than anything is pasta chicken veggies seasoned with fresh herbs .

I made this recipe without the beef and loved it. I never would have thought of frying anything without dipping in egg and breadcrumbs or flour first, so I was delighted by the lightness of flavors of the true veggies. Thanks for the recipe. I’ll try others soon.

I started eating like this and Iv lost so much body fat it's scary how fast i I've done it but now I would not eat any other way cus now I see food as fuel best way to loss and be healthy is the Mediterranean way of eating

Have just discovered your channel and loving all the info. For health reasons I want to do more Mediterranean style ccoking. Good to see that I’ve been on the rights track already. Only ever use olive all in cooking and salads. I’m in Australia and we are lucky to have some great quality local olive oil available. I’m a big fan of using my slow cooker to save time and money. To keep costs down it’s always been filled with a mountain of vegetables and legumes (our favourites are black beans, lentils or chick peas). Then just a little bit of mince or chicken mixed in. Big slow cooker batch lasts our family of 5 a couple of days. Looking forward to trying some of your recipes and adding more Greek salads etc.

Just bought a bottle of evoo and omg the peppery burn is so strong. Love it. I’m just beginning the Mediterranean way of eating. I tried plant based with no meat no salt no oil. Kept crashing. Then I’d overeat on fatty foods. Hoping this will quench my desires.

Great vid, i liked and subscribed. looking forward to learning those recipes. But there is one thing, you said they don't eat much meat or cheese, yet you put quite a bit of cheese in the salad and the pot had lots of meat.

Another description for the ‘burn’ is a peppery taste. We helped a couple harvest olives last year and went to the processing plant. It tastes AMAZING too scared of using it all up!

I always thought that the burn in the throat was a bad thing and a sign of the oil being old rather than fresh. Thanks for the info! Luckily in Europe most (if not all) the oil labelled Extra Virgin actually IS extra virgin (I know, those commie regulations ;)

when olive oil burns in the throat means that is "fresh" and is alive. When an olive oil is old doesn't burn because is "dead" it's burn because there are a lot of antioxidants, and when you taste it in a little glass you must start coughing cause of the throat burn.

I use the California Olive Ranch 100% California EVO, also I was harvesting and cooking up some purslane that I had growing in my garden it's really good for you.

Very nice but mate, noone in Greece puts vinegar or lemon juice in the traditional Greek Salad. Use olive oil and some oregano and you are done.

@@AllieBee00 Listen, i am Greek and i live in Greece i know exactly what we eat. In Northern Greece they differentiate a little bit but not much. If someone would put vinegar or lemon in the Greek Salad, people would laugh and most probably would not eat it. It is like humus, you guys think it is Greek, but people living in Greece don't eat it, many don't even know its existence :-)

What is your source for olives (Greek and Mediteranian}. I have a source from which I buy in bulk. Their selection, however has dwindled and I can no longer buy the ones that I want. Other than that I can only find olives in jars that are cost prohibitive.

So I have a question. You said that the chemical in the Olive oil mimics ibuprofen. I have kidney problems and my Kidney doctor told me to stay away from ibuprofen. That said, Would Olive oil be safe for me and othet people who have kidney disease?

My best friend and I are going to start doing this because we are diabetic. She is in really bad shape physically and we really need to do something to encourage each other. Do you have the recipe printed out? I did go to the website and downloaded the 7 day eating plan. Thank you for sharing these videos I appreciate it.

It’s been five years, did you continue with the diet? I had a diabetes scare a while back. Turned out it was not the problem. I thought it was but in the meantime, I did a lot of research. It really looks like the main thing is losing weight so if someone switches to a Mediterranean diet But ends up, not losing weight, it’s not going to do as much good as if they also are willing to eat in a mild caloric deficit and get the extra fat out of their pancreas. There are more radical ways of dealing with it along the lines of the work of Dr. Roy Taylor, who was a Doctor Who was able to use a kind of imaging to find out that the major issue was excess fat in the pancreas. Some people can get that extra fat, even when they’re not very overweight, and some people can be obese and not develop the problem. But the weight loss was the most important thing, plus becoming more active because that makes the muscles more sensitive to insulin and doing strength work to try to build some muscle because again muscles absorb the sugar until it’s needed. But if someone is always eating the same number of calories that their body needs, there will be no reason for the body to take that stored glucose out. I am on some forms that have to do with diabetes and I can’t believe how many people are there saying they’ve changed what they eat, but they don’t really aim at losing weight, and their symptoms don’t really improve. Anyway, all this might be moot for you. I hope things have improved.

Here in the UK we have been told not to cook with olive oil. They say if you heat olive oil to a certain degree it becomes harmful. Is that true?

That actually is misinformation. New studies have shown that extra virgin olive oil is one of the best to cook with at a high heat.

I have to say I’m a little surprised that the first recipe of yours I’ve encountered is called beef with eggplant when I am told over and over that the meat is only a small portion of the dish in real Mediterranean cooking. I see there are a lot of vegetables in this dish, which I think is a good thing! But I’m also curious about how often a meal would include beef. Wouldn’t the people eat that only say once or twice a month?

I'm interested in this way of eating and have been told by a few doctors that this would be the best diet for me, however, I have heard from several people that it is not good to cook with olive oil. A lot of people have said that olive oil can't withstand heat like that. But I see you cooking with it. can you explain?

Hi Denise, It is all about the smoking point of olive oil. You don't ever want olive oil or any oil to start smoking, but there is a 50 degree difference between when olive oil begins to fry food and when it begins to smoke. As long as you fry on a low heat you are fine.

My husband is from the Middle East. He told me true olive oil is green not white and u may even see pieces of the olive in it. This is true olive oil.

Crockpot have been linked with lead , lead poisoning so please be careful what you buy . The glazes used on ceramic crock pots can have lead issues . Any ceramic dishes , cups etc that have been coated with a glaze may have lead leaching issues . I recommend clear glass that has not been painted or stainless steel . Thanks for the Mediterranean diet info .

I used to teach ceramics in my own shop back in the 1990’s and yes, IMPORTED glazes may have contained lead. However the glazes used AS FOOD SAFE here in the US did NOT contain lead. In the United States I suggest we consumers look at packages and/or the bottoms of vessels, plates and cups for food safe labels. Lead is leached out by adding liquids so candy dishes would, for instance, be ok with candy but not for soup. Vases intended for flowers would not be good for water or milk, etc.

Why do recipes I've seen have meat being boiled then the meat and water are used in the recipe? I can't say I've ever boiled/poached beef before.

I can’t have vinegars so I mix lemon juice with a little bit of olive oil- grass fed meats are best and free range chicken are best .. I eat very little meat yet as type 2 I have changed to Mediterranean diet ..

Yes. It's about the heat tolerance. Just do a nice eady cook in your skillet or pot dont burn it just keep medium heat.

Is heating the olive oil bad for heart health? My dad has heart problem so I don’t want to cook him something that could aggravate it

Heating olive oil is not bad for heart health. Extra virgin olive oil is one of the best oils to cook with (according to a recent study). I try not to have my oil smoke, but you can still fry with olive oil and not have it smoke. Just cook on a medium heat.

Yes, definitely 😉! Lots of vegetables and fresh seasonal fruit, little salt and sugar, no junk food, and, most of all, eating as a ritual (a moment to be enjoyed). 😊🌹

Generally, you can just remove it. The Mediterranean Diet is very forgiving.

You can heat it, but not too a super high temperature. For example, don't use it to deep fry anything. I used it once to deep fry. It quickly overflowed the pan. Bad idea. It made a real mess.

No, cooking with extra virgin olive oil is not harmful. Recent studies have shown that olive oil is one of the best oils to cook with.

Yes, venison is one of the healthiest meats because deer are eating from the land and aren't grain fed.

Extra virgin olive oil is actually the best olive oil to cook with as it retains its health qualities. If it smells bad then you are cooking at too high of a heat and it is smoking. You can still fry with olive oil, but you don't want it to be smoking.

They don't eat meat everyday. In Greece, it is about half the time (averaging out to every other day). The rest of the time they are vegan.

He's very misinformed on beef farming/ranching in America. The cattle don't get sick from eating grain, plus they only eat grains for the last 2-3 months of their lives. The other 15-16 months is all grass.

mediterraneanliving yeah, but cattle are most typically fed 80-90% grain, 10-20% roughage at the feed lots, so they always have some fiber.

Chris MillerIt appears to be the over feeding of grain (as well as overcrowding and mistreatment of the animals) that makes the cows sick and need antibiotics. It’s not all farms that do this, but it’s impossible to know which farms do it unless you are at the farm. This is why I buy meat from local grass fed farms where I know the farmer.

mediterraneanliving farms don't feed grain, feed lots do. Also, when cattle receive antibiotics or similar medication, they have to wait until it's completely out of the animal's body before it can be legally sold in the United States. I don't think you understand how the beef cattle industry works in America.

Yes, you are correct. They eat lots of carbs such as fruits and vegetables, bread, beans and pasta. And they are some of the healthiest people in the world.

Well I've just watched both parts of your "What is the Real Mediterranean Diet?" vids, and was surprised by the emphasis on fats. You stated the diet was 40% fat and then demonstrated a low carb meal. Correct me if I'm wrong, but don't more than 50% of calories come from carbs in the Mediterranean and the Blue Zone diets?

I started eating like this and Iv lost so much body fat it's scary how fast i I've done it but now I would not eat any other way cus now I see food as fuel best way to loss and be healthy is the Mediterranean way of eating

Why do recipes I've seen have meat being boiled then the meat and water are used in the recipe? I can't say I've ever boiled/poached beef before.
