Just my opinion, i prefer use flatbar. Iam also build a gravel bike with frame from flea market. Best regards from Indonesia.🎉🫡

So the fork has no internal routing for brakes? And probably none for dynamo?

That’s correct. We stick with external routing for our adventure-focused bikes - it is a very deliberate choice. The fork does come with guides for dynamo routing on the inside of the right fork leg.
