Agreed. I'm 65. Not investing in Bordeaux wines that I'll never fully appreciate. Heck, I already have hundreds of bottles in my cellar that I'm starting to drink more frequently. Cellar is mostly California and Oregon wines these days. Dominated by Carlisle winery, but I'm on the 2016s and 2017s now.

@b286--With proper storage, Bordeaux drinks well, earlier now. $18-$25 at 5-7 years(not 7-10), $40-$65 at 10-18 years(not 15-25). I also like my wines a little younger. I buy 375ml, & keep empty ones. For this example, I'll choose $40-$65 bottles. 375ml start drinking a bit later than 1/2 time(7-9 years, Not 5-9), but have a smaller drinking window(7-9 years, not 6-11). When the 375ml tastes right, Start opening the 750s. Or, I'd open a 750 at 8 years, use an Empty 375ml, to pour half of the 750 immediately, close to the top, then use the 750 cork(so I know what's in the 375ml), up to 6 weeks later. Decant the 2nd half to drink, & calculate a new drinking window for the rest of the bottles.

If you are tasting without food, then you would expect the tannins to become more pronounced when you drink more. This is because the protein in your saliva binds irreversibly to the proteins , which initially makes tannic wines, taste softer, but the more you drink the lower is the amount of protein that is in your saliva, so the more Tanic the wine tastes
@ThreeFiddy17014 ай бұрын
Interesting comments about tannins there. I tend to persist drinking reds without any food to really determine if I really like the wine or not. IME, cheaper bottles of Italian reds go really well with savoury food. I leave the pricey Pomerol's, Barolo's and Burgundian Pinot Noirs to pure drinking only.
@psychotropicalresearch5653Ай бұрын
I failed to notice a mistake in my previous message, which should have said the protein in your saliva binds irreversibly to the tannins. Also, when siliver flow is increased the amount of protein in it tends to decrease. This is why you have citrus fruits at half time in sports, not cold black tea

Hi Konstantin! As always a great video. Couple questions or maybe a video idea. As I’ve gotten into wine more and more, I’ve been doing more and more blind tastings….I thought “this can’t be great for mouth health” long term. So my question is, besides general good dental hygiene, is there anything you do specifically to keep your mouth and palate healthy? Also, is there a chance we ever get a cellar tour video? 🥂!

Great vid, thanks. I regularly attend dinners where we drink several bottles through an evening. Our experience is that many wines change as the evening progresses and our favourite at the start often slips in the rankings as other wines start to flourish. Your assessments are all snapshots, wonder if you would rate wines differently if you spent longer with them? Worth doing a vid on this?

In other videos he often retastes wines at the end of the video. also i think he spends quite some time with the wines, but due to post production magic it shows just the pour and first sniff. if a wine just keeps evolving he definitely will add this to the video, as he already did in his champagne video.

I am in the wine industry and living in Bordeaux. The quality is not the probelm here. The problem is the En Primeur system that in my opinion is just stupid. I see the benefits for the chateaus with the cash flow but this system make the wine more expensive than they should. Good for end consumers is that Bordeaux are in crisis at the moment en the En Primeur campagin for 2023 is bad. Prices will go down more and more and in the future i hope we will see a change. Still some Bordeaux wine are on the highest level and just gives joy and good moments but the price has to come down.

Great review, thank you so much Konstantin! Bordeaux almost never disappoints. Of all the French wines, it is, mostly due to historical reasons and the early influence from the British and the Dutch traders, the most transparent wine market. Wines are auctioned, scrutinized, there is some snobism about first growth, but by and large you get value for money and good importers are able to get good wines at very good prices. Compare that to Burgundy, where there is no transparency at all, it's all about who you know and generally the reds there are ridiculously overpriced (it's also a simple issue of supply and demand, red Burgundy is ultimately very small production vs red Bordeaux, a factor of 1 to 10).

Both NV and Bordeaux wines are heavy, full-bodied wines, but you used Performance Riesling glasses in this video. Would this be just a simple change in preference or would this change make any meaningful difference in terms of the tasting experience?

Hi Konstantin, I love your videos. I found it interesting what you said about Brett, especially im relation to wine 4. I don't like even small concentrations of it in wine, but I understand some people do, and there is nothing wrong with it. My concern is, though, if the wine isn't filtered like the one in the video, how does the winemaker know Brett is going to remain subtle in the wine and not grow and spoil it? Unfortunately, without filtration, this isn't possible, as one can't control what the yeast does in the bottle. You either remove it or you gamble. So wine n4 being good is just a fluke. I am not sure we should reward random winemaking with high scores. This is just my opinion, don't get me wrong. Love your work! 💪

@QualeQualeson4 ай бұрын
Bordeaux wines are price wise much more marked by vintages than I am used to seeing. The 2017 Rauzan-Ségla is considered somewhat poor whereas the 16 and 18 for example are considered good and so both are considerably more expensive and would likely have fetched a higher score, though I obviously cannot fully predict where the Baum bunny hops. On the other hand, Gaia Gaja said that she considered vintages a bit of a myth, but that may just have been her being business savvy. It probably was, she strikes me as very clever. The 2018 Rauzan-Ségla would run me about 144EUR in Norway and would probably age 3+ decades with grace. I want to say that's far from outrageous, but then we are being conditioned as we speak 😅
@timmy34294 ай бұрын
2017 is a cold vintage and will lack that big complexity and structure as 16 or 18, but 2017 is a vintagr that have it's window for drinking now and are drinking very good. @@ronmcmartin4513 Indeed :) But let's entertain for a moment that she has other motives as well. For example, I noticed that other people who's lives are steeped in wine, that they can tend to develop a certain taste for, let's call it contrarianism. In other words, they're bored. So it might be that part of her actually means it, or at the very least that she thinks that a vintage might not be anywhere near as black and white as the market would have it.

Bordeaux is and has been for years no longer what it was. Up to the 80’s a Bordeaux was a “gassy” wine, that you had to open and leave for a while, or decant. It had to loose its gasses. Opening it, it would smell like a cow shed. After decanting and a bit of waiting it lost the gasses and smell was like summer fruit and flowers. Due to the American and Japanese market they changed the way of producing it, and now you can open a bottle and drink it directly. I started drinking fine wines in the 80’s and had an older (and very much richer) friend who learned me about fine wines

Le C des Carmes Haut Brion is not a second wine but a property by itself. It was acquired by the Pichet Group, owners of Carmes, and renamed Clos des Carmes then C des Carmes. It is situated in Martillac while Carmes is in Bordeaux next to Haut Brion, 20 km apart. It usually tastes better than in this video. The 2016 is outstanding. Maybe by being in position #1 and due to its tannins, it’s difficult to judge. Your proverbial sentence on your spittoon, is that nordrhein-westfälisch? Not a native speaker but used to live about 30 meters from Grenze.

😊 I'll tell you what, I'll give you all my allotment of Bordeaux in exchange for your allotment of German Riesling! 😅

Hey there, did somebody ever try Chateau Clos Manou and can tell if it’s really such a bang for the buck, as Lobenbergs says? Thanks in advance😊

It makes me (and anyone else training for wine courses) that even you get confused a few wines in.

What does the inscriptions on your spittoon say in English?

I wonder if Konstantin will ever do Japan. There are two varieties that are interesting, koshu and muscat bailey-A. On top of that there’s plenty of bordeaux and burgundy varieties and there’s a winery in Yamanashi that makes a single variety petit verdot!

I have tasted the De Montille Pinot and haven’t I tasted Koshu on the channel before?
@connorwinton43433 ай бұрын
@@KonstantinBaumMasterofWine Koshu comes from Yamanashi which is the oldest and warmest wine growing region in Japan. It’s a red grape which produces mostly white wines and something I would recommend in a hypothetical Japanese tasting. It’s very unique, that’s all I’ll say.

My value pick would be most wines from Cotes de Castillion

Rauzan was an off-vintage(2017). The only 2017 I've tasted was a Moulin du Cadet(St Emilion), well regarded(Avg 93+ from pro critics: 100% Merlot). I like St Em, but this had a Gigantic hole in the middle--90/91 points for $30. NOT a value. EDIT: I had the 2nd Half of the 750, that I poured into a 375ml, immediately after I opened it, 3 weeks ago. No decant. The middle filled in. Still Medium balance. A better wine. 92 points.

I don’t understand your use of the word cuvée, am I missing something?

cuvée is often meaning blend for germans

I always put the Glasses into the description. This was the Riedel Riesling Performance.

Well yes I usually look for something for immediate consumption as well, but there are too many wines that I want to try (your fault!), which makes it easier for me to wait for some years to open some of the bottles I have 😂
