Hi Melanie - This is the way I do all of mine and it works perfectly. Also allows for you to remove the pom to wash your beanie. I include a little card with washing instructions with the beanie so they will know that it’s hand washable without the pom and how to remove the pom. Hope you are doing good. Hugs.

Just guessing here but assuming it's because you need to be able to get the elastic through the original hole and to make it easier to attach.
