Cakeshare, my melon and mint cheesecake recipe! ASMR

CHEESECAKE BASE:
100g biscuits
7g cocoa powder
40g butter
MELON CREAM:
270g spreadable cheese
100g sugar
270g fresh cream
7g gelatin in sheets
35g cold water
190g melon pulp
MINT JELLY:
50g water
50g mint syrup
4g gelatin in sheets
20g cold water
DECORATION:
Melon
Mint
DOSES FOR: 7/8 PEOPLE
CHEESECAKE DIAMETER: 16 cm
N.B: fresh, delicious and simple to prepare !! This cheesecake is perfect to end a meal with friends !!
The preparation is very easy, you just have to pay attention to the rest times. To obtain the melon pulp you just need to blend 200g of fresh melon, ripe if possible, you don't even have to sift the mixture.
The orange dye is optional, I used it to accentuate the orange color of the melon. The gelatin should be hydrated with five times its weight in water and after about 10 minutes of rest you will have to dissolve it in the microwave for 10 seconds or in a bain-marie if you prefer.
The cream, as you can see from the video, must be divided into two equal parts, one of the two must remain at room temperature.
Mint jelly does not need sugar because the syrup is already sweetened.
Decorate the cake as you see fit with the help of melon and mint leaves, let yourself be carried away by your artistic vein.
