You got to love Rabbit :) we had the stew with pasta yesterday. It was funny hearing you mention the amount you cook. My mother cooked for 8 no mater how many people where home for dinner :) there was always leftovers.

Ux veru? LOL SO TRUE! I have that European trait in me from both sides. I love the stew and the fried version. Nowadays the young chefs are getting more creative with fenek too. But nothing beats the classics! Thanks for watching Charlie!

Next time i come to Malta....(September) I will be brave and try rabbit....the last 5 years or so i have visited i have never tried it....but i really must!! You know what us crazy Brits are like....can't eat cute fluffy bunnie-wunnies!! Lol....It's hard to get rabbit here in my home town anyways....so might do what you and Amaru suggest and try chicken....x

LOL - OH, YOU MUST!!! It is not gamey tasting, and is quite lean...leaner than chicken, so it's good for you, and your waistline. lol. Well, there are a lot of Brits who live and visit in Malta, and I have to say - quite a many of them enjoy our fenek. I am sure you will too! If not - it's not the end of the world - you can say you tried it...but believe me - it's quite good! COME SOON! ;)

Hello. We used to live in Malta and my parents have visited regularly. All my mum talks about is fried rabbit. I'm going to cook it tomorrow for their 50th Wedding Anniversary as their time in Malta was the best time of their married lives. I'd like to ask if the rabbit should be crispy once cooked as my parents along with the Maltese used to eat it using their fingers? Also, the rabbit I have bought seems a lot bigger than your rabbit, therefore will probably need a lot more cooking, should I use water instead of another bottle of wine or would you recommend to keep cooking it with tmore wine? Can I also ask how long you cooked your rabbit for? Sorry if they seem like silly questions but I want my meal to be just right!

Glad that you are going to try this! If you want to make fried rabbit, and have it more crispy, you can LIGHTLY coat it in seasoned flour to do the frying, however, when the liquid is added, it will get soft anyway. If you prefer to keep it crispy, you can bake or even BBQ the fenek. If your rabbit is larger, no worries, it will still cook in the approximate same time. I would add a bit more wine and some water if you prefer...just make sure most is evaporated to make a nice gravy. I add more as I need it slowly. You will know when it's ready as it should be very tender, and he leg meat will start to pull back from the bone. Don't over cook tho, as it will be too mushy. And if undercooked, it can be tough. Think of it like chicken legs! Good luck, and I hope I helped you out some! xo
