I hear you. Internalizing a lot of new knowledge when you first start, takes a strategy. Let me know if this video helps for your situation. Personally, I would do the blind quiz technique. Write the food name on the left hand side of the paper. Then write the abbreviation on the far right side. Cover that last column of answers with a second piece of paper. Now, in the “second to last” column, try to recall all the abbreviations again. Peak under the cover sheet only after you struggle for a bit to remember the abbreviation. I don’t remember the name of the study, but several psychology experiments have proven that we memorize MORE from trying to recall something than we do by simply repeating it. It’s the struggle to pull it up to our consciousness that make a the connection stronger.

I hope so too. If throw straight memorization technique doesn’t work as well for you, try a more visual approach. Ask the trainer or manager to let you have one extra training shift on a busy night where all you do is tray food from the window. You can see a lot of it and practice recognizing it so it’s easier to visualize when you do your menu test.

To be honest, I typically don’t memorize prices. This may be more important at restaurants that have lower prices. At expensive restaurants, almost no customers ask you the price of anything. Is it required for your menu test? The guest usually asks you questions while they still have the menu. So you should be able to explain the ingredients and the preparation method, but the price is right in front of them on the menu.
