My wife and I lived in the D.C. area a long time ago and Texas barbecue was pretty much off the menu. You got North Carolina and Memphis style. This recipe sound pretty authentic to me. I expect I'll be doing this in the near future.

Lived in Austin for 24 years before we did the move to Northern Virginia. Came back to the Panhandle when my mom's health went downhill. Between us we have family all over the state from here to to San Antonio, Houston, and Corpus Christi. None in El Paso that I know of.😁

I live in Memphis, but I actually prefer mine chopped. I know a lot of places here pull, but I like the places that chop it and use a Memphis version of a vinegar based sauce. I'm also a no slaw guy. I go hot, no slaw, and extra sauce

Joe my friend you just might have some Southern Boy in you!!! That right there is how I was taught to cook Whole Pork shoulders 45 years ago... They way you did the sammie is right on, it is Pulled. When you made that "Ball" of meat I about lost it. That is how you make a Memphis Pulled Pork sandwhich. Got to have Mayo/Miracle Whip slaw. As the customer I smash it so them slaw juices get down into that meat. Sauce on the sandwhich, you trying to hide something. Sauce on the side, you adding flavor to that bite... Great Memphis/Mid South Pulled Pork video.

The BEST mayonnaise I have tasted from a jar is the "Spectrum" brand w/olive oil . Fresh is better, naturally. Great Video. Here in Phoenix I have found that if you want to get good spices you go to the Asian & Arabic Markets. They have incredible variety and very good prices.

I have lived in Memphis for 14 years now and never come across a restaurant that doesn't put sauce on the sandwich. They give you an option on the slaw, but most people put it on the sandwich.

@@SmokinJoesPitBBQ that explains it! To give context, let me tell you their process for "Texas style" brisket. They smoke it for 4 to 6 hours then put it on a deli slicer and slice the whole thing super thin. They then finish cooking the brisket slices on their flat top to make sandwiches to order! They catered our Texas A&M club muster one year and the owner was so proud of his authenticity... It actually did taste pretty good, although nothing like normal brisket.

If your barbecue cannot stand on its own without sauce then you have no business smoking barbecue. That’s just my opinion though. Believe it or not I do most of mine on an old cheap kettle grill made by weber. I don’t use my big one that often.

Try marinating your pork butt in mama sita's adobo mix overnight. Inject the marinade as well. The next day save that marinade to spray while cooking. It makes one tender meat.

If your using a pellet smoker you are not smoking meat your, chemicaling the meat. And that is so bad that "Chemicaling" is not even a word!
