Ireland is on my Bucket List of places to visit. I love all the greenery and the beautiful landscapes. This dessert reminds me of a roll cake we have from my homeland but we call it Brazo Gitano or Gypsy Arm. It's more of a cake though and we fill it with fruit pureè like guava or pineapple, and we also fill it with cream cheese or vanilla custard. Soooo good. Your version looks heavenly. It has my favorite things too: merengue and bananas 😋😊😄 yummy!

I had a meringue roulade that the folks in Cork referred to as "gooey meringue." It was my very favorite dessert, and it was very much like your dessert, but it was just filled with whipped cream and then doused liberally (when sliced for serving) with the most amazing fresh, sugared berries imaginable. What fond memories of my stay! I will now be able to attempt a reasonable facsimile here in the states! Thank you for this recipe!

Gemma , I did not even know that you could make a roulade from meringue! There I have said it! Everyone knows my shame😣 I really must tell you that you are such a good teacher. You always make me feel like I can conquer anything. You always say to us things like if there's a crack don't worry about it. That truly is a gift to those of us who want to be bigger Bolder Bakers! You know I must try this now because I have my new stand mixer! Also, I never knew it was easy to make butterscotch - well it is when the chef teaching you gives you the exact minutes LOL I love the bananas, the butterscotch, and the whipped cream! Brilliance. I also love finding out about foods that are popular in Ireland because I did not get to learn from my relatives. They did not talk much about what they called the old country. Thank you for giving us all the gift of feeling that we can do amazing things. Fun fact - that shirt is the best!☘☘😁💚💚💚

I made your donuts....they turned out beautifully!!! My 5 year old was very happy to come home off the school bus to have at treat waiting for her!!!I will be making your cinnamon buns soon....and your apple crumble....those are my husbands favourites.....your meringue with pistachio is another one I cannot wait to dive into....homemade crunchy bars....honestly. You have soo many that look awesome Gemma....I just wished you did lunches and dinners because I would love watching and cooking your recipes...you should seriously think of maybe adding some of your favorites .....keep up the great food recipes,!!!Steph

And all the rest are great too :) I am working on a bread series right now which will be more savory. I am not opposed to savory as I trained in savory and well as sweet so who knows :). Lol I burnt the meringue. 😢 That was my oven's fault though since it tends to overheat on the bottom rack. >.< Next time I'll compensate for that! ❤️❤️❤️

Hi Gemma Stafford I made meringue today and everything was perfect I baked it for 15m 170C I thought I over baked it because the textuer was rubbery .Then I let it cool completly But it stuck to the cling film when rolling it I managed to fix it and roll it. I just want to know why it stuck to avoid that next time :) However it was delish and so light. I have to say that it was my first time to make meringue and it won't be the last. Thanks Gem :)

This looks uniquely indulgent! I am allergic to bananas but I think this would be great with just the caramel sauce or even whole grapes (so they don’t water down the meringue). Thank you for the Irish Dessert education, so neat! Your videos are always so enjoyable and enticing!

oh my goodness i almost drowned in drool after watching this video *-* it looked sooo good! plus the music in the beginning just made me so happy ^^ this dessert actually reminded me of something similar we have in the philippines called brazo de mercedes (except without the bananas and caramel), i was wondering if you've heard of it? :)

How long does this hold up once assembled? Looks delicious. The Aussie equivalent for this is the Pavlova but once put together you gotta eat it quick before everything goes soggy from the whipped cream!

We have our Filipino version of this called Brazo de Mercedes, a combo of meringue and custard filling. And with the frozen version, layers of meringue, custard and mango ice cream. :)

Oh! I was so curious what this was. In our country, we call this brazo de mercedes. Local bakeries here put lemon custard as filling. Mmmm... But they often are too sweet for me. Like 1 slice is too much for me.

Hi Sigita. It means 2 cups using measuring cups for liquid ingredients. Dry and wet ingredients use different measuring cups.

Not a banana fan whatsoever. What fruits are good to substitute? I LOVE citrus, like lemons, limes, starfruit, pineapple...But whole or cut pieces may be way overpowering. Love the idea of setting out a beautiful rolled dessert. thanks for uploading this!

marshallcanify no worries, a great combo is sliced mango and passionfruit or lime zest. Or raspberries and serve with a fruit sauce, or chocolate sauce. you can cut small pieces of pineapple, and maybe a little rum in the cream:) (if you are over 21 :)) and some coconut on top :), sound good?

***** Yeah, Caramelized pineapple is gorgeous. One kitchen i worked in used to slow roast it for hours in a pool of brown sugar, coconut milk and rum, really good :)

Cover tightly in clingfilm and it should be fine for a couple of days. You can also freeze it if you want to keep it longer.

Mae Cheah cornstarch is a thickening agent. you usually use it in thin frostings and choux batter. if you dissolve some corn starch in water, and pour it in any batter, if you let that batter boil for 3 minutes it will achieve its full thickening power. aside from that, cornstarch is also called cornflour, and is used as the "flour" in desserts such as turkish delights to keep them from sticking when they're done. thats why they have white specs, because theyve been dusted generously with cornstarch to prevent them from sticking

Warda khan Oh, thats odd. So one thing could be maybe cooking it a little longer, also just double check the amount of sugar you put in. I would think it would be just those two things. Cook it longer and I'm sure it won't happen again :(. was it ruined? you can always mix broken, messing meringue with cream and fruit and eat it. it's called ETON MESS, and it is gorgeous :)

Warda khan aw well that's great. Glad the trifle worked out well :). Yeah I really think it might be an oven and timing. if you think it needs an extra 3-5 then just leave it in and keep an eye on it. Fingers crossed for you. :)

Katrina Mirambel Hi, Sorry I just saw your message. Google didn't alert me. I don't have a recipe because I don't add anything to it, just crew. For this meringue I used 2 liquid cups of cream and whipped them with an electro hand mixer until stiff. With all the sugar in the sauce I think plain cream is a good balance. :)

Hi Katrina Mirambel For whipped cream I buy liquid whipping cream and whisk it on my stand mixer or hand held mixer until stiff peaks form (around 3 minutes or so). I don't add any sugar or vanilla because I think good cream doesn't need it, and the meringue and butterscotch are sweet enough. hope this helps :)
