Please make sure your mixing bowl and whisk are free from any grease. Use fresh room temperature eggs. Your oven temperature has to be accurate. If your oven temperature is higher then the programmed temperature, your meringues will rise and expand and eventually crack. I suggest use a oven thermometer to control your oven temperature before thinking of making this recipe. So good luck and success.

Thank you for your clip. I enjoyed it. Meringue is a good source of albumin. Cancer patients undergoing radiation or chemotherapy are usually suggested by the doctor to eat mor of white eggs. However, most recipe uses a lot of sugar including this one. I tried ten times to make a low-sugar meringue (half the amount of sugar). However, I often faced the problem that the meringue release water or become flat after baking. Any suggestion ?

I'm assuming the icing sugar is what helps to keep it pure white. Glad to know that when you add fine sugar that you can't over beat it. Some recipes have cornstarch in for the marshmallow inside, for me it become too chewy.

For me and with this stand mixer roughly 8 to 10 minutes. Timing is a guidance, not accuracy. That is why you need to check it now and then like in this video. Especially different mixers perform differently.

As long the colouring is not too watery it should be ok. If you want to be safe, just use gel type of colouring.

Hallo Michael weer een fijn recept zou het ook willen maken ,de vraag is waar haal je de kleurstof? Heb gezocht in je ander recept met eiwit dat was ook gekleurd maar er staat niet bij wat juist,waar koop je dit,ook las ik iets van. Cream of tartar hoe noemen ze dat in Belgie heb dit ook nog niet gevonden.Bedankt voor al de mooie en lekkere gerechtjes. Je werkt met zo veel perfectie zo proper en rustgevend. If you are from Belgium, you can find the food colouring in AVEVE but they don't have much colour choice, otherwise you can check out this link www.amazon.co.uk/Food-Colouring/b?ie=UTF8&node=359944031 You can find cream of tartar on amazon.co.uk. UK is not far from belgium, so the shipping cost is very cheap. Many greetings.

It depends on oven to oven. You can try 100°C on your oven and see what happens. It might crack a little or it might not.

Tita Linda, every country called or named it differently. Icing sugar is powdered sugar. And in Belgium fine sugar is not caster sugar. We can find fine sugar and caster sugar apart in the supermarket. Fine sugar is a bit finer then caster sugar. Almost like the same as those sugar that specially made for making jam.

Not sure you mean the shop or the baker. Based on Belgium, in a supermarket pre-packed meringues produced by manufacturer price range from 13,00€ to 17,00€ per kilo. In a baker or pastry shop the price range can be from 20,00€ to 30,00€ per kilo.
