I mean, if you're expert in your trade, I'm sure you know which foods can't be eaten by (and sold to) Humans, which by Trandoshans, which by Aqualish, Nikto, Rodians and so on. And if they steal instead of buying... well, they can get poisoned, as far as the merchant is concerned. Keeping a majority of foods accessible to all is definitely an advantage, but so is to provide variety, and even to have specific delicacies *favored* by one species or another.

Re: the food being bland. Anyone who has lived in a large city, or even a small one but with a mix of ethnicities, knows that just as there are neighborhoods where ethnicities cluster, the stores in that area will sell the foods of that group. It's one of the great things about cities with people from all over the world. It makes food and life generally, much more fun and interesting. In a city as small as Providence, RI (I know, it's the second biggest New England city, but it's small), one could get such different in the foods in the Italian, Portuguese and Armenian areas. And in the Irish ones you could get potatoes, pork, and cigarettes....so, er, well, not overly seasoned.
