I love this because I swear the most vegan cuisines I’ve had were Mexican food and even when I lived in Mexico for a month there were more vegan places to eat than the city I came from.

Mexican cuisine is very naturally vegan-friendly. Frijoles doesn't require meat to be a complete dish, and a plate of local fare works fine without any added animal products (ex. cheese)

Prehispánic food was plant and fished based since cattle was only brought by the conquistadors. That’s why a lot of us are lactose intolerant. Mexican cuisine tho since it’s the combination of Spanish and Native Mexican cuisine DOES uses a LOT of dairy and cattle foods things

Frijoles are typically made using bacon fat or some other kind of lard. It's part of the reason why it tastes so good. Also, Spanish or Mexican rice is usually made with chicken broth or stock.

I use Nature’s Charm Coconut Condensed Milk, their Coconut Evaporated Milk and either a coconut milk or Almond milk for the tres leches, add a couple shots of rum ❤️

I have found sweetened condensed coconut milk and evaporated coconut milk. I guess for the regular milk I could use almond milk. I want this recipe!

Some say Mexico, some say Nicaragua, while others say it goes further down to South America and the Caribbean. All in all, it's a LatinAm dish that is enjoyed by all latinos/latinas! In Venezuela, we have our own version of Tres Leches 🍰 called Bien Me Sabe. Although we also make Tres Leches as a separate dessert, but we soak it in coconut liqueur or rum like they do in Puerto Rico.
