You have to damage it enough so that you get the first cinematic where they protect themselves with the metal wall, there you will only be able to use them. min 3:23

iirc the landing hit and the final hit of DT do 10% more partbreak damage. i run pb2 on evasion mantle to help with 1st phase head break
