In VietNam, many food stores're small like this. But, customers can contact with the owner to help improve the flavor. Day by day, week by week, the flavor of dish is compeletly to touch Umami. So, One dish is not the same flavor.

I think you got a local specialty of Hai Phong city, which is a port city, while you're in Ha Noi 🙂 I do miss eating out in VN where I, as a customer, can actually chat with the owner or the help. I learn so much about the local neighborhood in talking to them. A true communal culture and characteristic of Vietnam. The US just don't have that characteristic and with most of our restaurants being franchise owned where the owner isn't even there, the people that work there are not emotionally invested in the eatery so there just isn't much interaction.

She poured way too much soy sauce. Just keep the soup as original as you can. This dish is very famous for its noodle. I forgot the process to turn the noodle into yellow, but it's from hard work, not artificial color. By the way, you can always ask for more extra meat to add onto your dish and pay for it. Just say "More Meat" "Nhiều Thịt" in Vietnamese. The sign: "1) Miến CUA or 2) Bánh Đa CUA. The one you're having is called Bánh Đa (that yellow noodle), "Miến" is like glass noodle, a clear type of noodle. "CUA" means Crab (same type of soup, just different type of noodle)

bánh đa có trắng và đỏ , bánh đa trên video là bánh đa đỏ , mầu đỏ được tạo ra từ "nước hàng" là đường đun sôi ra dạng lỏng cho đến khi cháy đỏ , "nước hàng" làm mầu cho cá / thịt lợn kho và một vài món khác nữa . "Cua" là con cua sống trong ruộng lúa nước , chế biến bằng cách xay nát rồi lọc lấy nước , đun sôi nước đó thì thịt cua sẽ kết tủa và nổi lên trên mặt nước rồi được vớt ra gọi là gạch cua . Vị chua của nước là từ "giấm bỗng" , giấm bỗng là gạo ủ lên men nấu rượu , nấu rượu xong còn gạo đó người ta làm thành giấm bỗng . Miếng thịt tròn mỏng trong video là chả cá , món bánh đa cua được làm từ thủy sản nhiều nên phải có vị hơi tanh một chút thì mới đúng , nhưng không được tanh nhiều quá . "Miến" = glass noodles , miến được làm từ bột củ rong riềng và kiểu cách làm gần giống với bún , bún được làm từ bột gạo , gạo được ngâm nước lên men một chút nhưng miến làm từ bột củ rong riềng không lên men . Một vài thông tin đến bạn . Chúc mừng năm mới an khang thịnh vượng ! .

Màu vàng này được tạo từ đường+ chảo + nhiệt độ = màu vàng và họ trộn với bột gạo để tạo ra sợi mỳ màu vàng thay vì màu trắng. Tôi thích mỳ màu vàng vì nó có vị thơm riêng từ đường.

Cha da is ice tea, if there's no ice it's just "cha" . And i had a feeling, Anna was gonna use the soya sauce n squirt 1/6 of the bottle lol u sure do like it salty/savoury 😅 Dan is correct, the Vietnamese way to eat noodles is to slurp it up 👍

Yes, because they sweat a lot walking & hiking daily for many kms. A lot of sweating & depletion of sodium in their system, thus, the intake of soy sauce. If you notice, we didn't see Dan & Anna taking salt. Soya sauce is their main source of sodium, then. 😃

nói chung là bây giờ nhiều món ăn ở Saigon hay hà nội không còn ngon như xưa nữa bởi vì người bán pha chế thêm cho nhiều chứ phẩm chất không như xưa, như là năm 2019 tôi có về việt nam và ra hà nội thăm bà chị, buổi sáng đi bộ ra đầu ngõ ăn ở quán bán canh bún lúc họ bưng tô bún để lên bàn là thấy ngay không phải rồi ( canh bún nấu với riêu cua, rau muống luộc sẵn khi bán cho bún và nước rồi mới bỏ rau muống vào ) dàng này có nào là đậu hũ, tiết heo, thịt bằm, chả Huế….cái này sai hoàn toàn
