Eggs - 2
Sugar - ¾ cup
Oil - ½ cup + to grease the plate
Curd - ¾ cup
Milk - ¼ cup
Desiccated coconut - ½ cup
Maida / plain flour - 1 cup
Baking powder - 1 tsp + 1 pinch
Salt - 2 pinches
Hi everyone, today let’s make a simple sponge cake which does not require any beater or even a cake tin..
To prepare the simple cake batter, into a mixer grinder, add 2 eggs, ¾ cup of sugar and half a cup of oil and quickly blend together to combine..
Once it’s well combined, add ¾ cup of curd that is not very sour, and add ¼ cup of milk to it and blend again to combine all the ingredients well.
Once everything is combined, add half a cup of desiccated coconut to this mixture and gently blend so that the coconut is mixed with the batter. Do not blend for too long, else the coconut will grind it into a paste..
Next, transfer this batter into a large mixing bowl and sift in a cup of plain flour, 1 teaspoon and a pinch of baking powder and two pinches of salt..
Mix everything really well and transfer the batter into a plate which is greased with some oil and dusted with some plain flour.. you can either dust the greased cake tin or plate with some plain flour or you can place a parchment sheet on the plate and pour the batter on top of it.
The batter should fill up to ¾ th of the plate.. After transferring the batter into the plate, tap the plate a few times to get rid of any air bubbles that may have been trapped inside the batter .
You can bake this cake on the stove top or in a pressure cooker.. To bake this on the stove top, heat an iron pan or an aluminium pan or any other old pan with a lid, on a medium heat and place an elevated base for the cake to sit inside the pen. . This process is the same as pre-heating our oven.. make sure to heat the pan on a medium to low flame only, else the cake will have a burnt aroma to it. The elevated base is kept so that the bottom of the cake does not touch the pan and burn. This step is very important.
Once the pan is hot, place the cake and cover it with a lid tightly and let it bake for around one hour and five minutes or until fully cooked through.. The lid you choose should not let any steam/heat outside.
You can insert a toothpick in the middle of the cake and see if it comes out clean to check if the cake is fully cooked.
Once the cake is cooked, take it out from the pan and let it cool down completely before cutting and serving the cake!!
