Oh, Sam, in the US, we've got this stuff called 'Goof Off' that could be handy for a lot of overspray on some stuff, I dunno what it might do to wiring, , but for your plastic boxes and things in there, works quite well.

Sammit to clean up the wiring harness, use some of dei automotive wire loom, it will look and last a lot longer than electrical tape

engine bay needs a clear coat to make it shiny and pop and will make it easier to clean aswell

Best thing to do before painting an engine bay is to wrap everything with aluminum foil. Saves a headache or 2✌

Just use some paint thinner no need to wait for the parts to dry. It’ll work on the wires and fuse box. The brackets I can understand a fresh coat of paint but no need to worry about every little bit of over spray. Ask for some paint thinner.
