RECIPES BY CHEF JOEL
Noodle-less chicken pad Thai
Ingredients: Yields 4 servings
1red chili, small diced
3 garlic cloves, minced
1in. piece ginger, grated
1cup cubed tofu
1lb. chicken breast, sliced medium-thin
6-8 carrots
1lg. daikon radish
1lg stalk broccoli
1 green onion, chopped
handful shredded, purple cabbage
handful toasted, peanuts
handful, bean sprouts
cilantro to garnish
lime to garnish
olive oil
salt & pepper to taste
Sauce:
1/4cup peanut butter
1Tablespoon, tamarind paste
1/4cup coconut aminos
salt & pepper to taste
Method -
Make the sauce first in a small bowl by combining all the ingredients together, and whisking until combined.
Heat a large, high walled sauté pan over medium heat with the olive oil, chili, garlic, and ginger for a couple minutes until fragrant.
Add chicken, and cook 2 min per side, until cooked through. Remove from pan and set aside.
Add broccoli, and cook for several minutes covered over a low heat, until cooked through, but still has bite. Meanwhile, take a peeler, and make long shreds of the daikon and carrot.
Once the broccoli has cooked, add the carrots and daikon, and sautéed for about 2 minutes, until wilted. Add sauce and cook intel mixture has combined. Add tofu, season with salt & pepper, then plate. Garnish with green onion, cabbage, peanuts & sprouts and a wedge of lime.
High protein antioxidant bites
2Tablespoons, maple
1/2cup, almond butter
1/2cup, pitted dates
1/2cup, oats
2Tablespoons, chia seeds
2Tablespoons, ground flax
4oz, 85% chocolate
small handful, raw pumpkin seeds, roughly chopped
small handful, goji berries, roughly chopped
small handful, raw cashews, roughly chopped
small handful, sesame seeds
Method -
Combine the dates, maple, and almond butter in a food processor, and mix until a smooth paste is formed. Add the oats, chia, and flax and pulse to combine.
Press into a lined tin covering the bottom of a pan in a 1/2 thick layer. Refrigerate for an hour.
After an hour, melt the chocolate over a double boiler, or microwave, until just melted. Pout over the mixture in the pan, and cover with the pumpkin seeds, goji, cashews, and sesame. Gently press down, so the nuts and seeds can adhere to the chocolate.
Refrigerate uncovered until chocolate has set.
Cut into 2in squares.
Store in an airtight container in the refrigerator for up to two week. Or however long they last :)

Hi Kelsey! From a fellow anxiety queen and comfort eater, this moment at 8:45 --Ooh man! I felt it. I'm not a therapist but just wanted to share some wise words mine said to me recently (and I'm paraphrasing): life's not meant to be a series of linear successes. It's okay to fail a little, make some mistakes. Try to practice being kinder to yourself when that happens. As long as you stay motivated towards your goals... obvs listen to your own therapist for life advice over a rando on the internet lol. But yeah I just wanted to share that. I love both you and Michelle. Y'all are beautiful souls in this world. Congrats on this journey, you kicked ass!! XD

Tbh it's not landing with me either. Like, I don't hate her as a person, but I wish she would be serious when she should be serious... She chose to partake in this program. Couldn't finish the whole video for the first time on these transformation series.

You clearly don’t know what it’s like living with chronic illness and pain, you would understand the saying “if I don’t laugh at it I’ll cry at it” and her humor far better.

@@Gobbygoblin Whatever you do to achieve a physique is what you must do to maintain it. Most people don't lose weight or gain muscle mass because they want to spend their entire life maintaining that exact level of activity.

@@c.t.o.4200 I think what they mean is the transformations many fitness influencer boast about, which mainly targets weight loss in very big amounts and in a very short time. For the general human's health. Although most people search for a quick solution for weight loss, it's often not sustainable for the person because they either chose the easy way like a medication or something similar or simply overworked themselves.

I feel what Kelsey is feeling about the food... I breakdown when I can’t eat foods I enjoy because I use it as a coping mechanism and for comfort. That’s 100% my biggest weight loss hurdle

I totally get you. Definitely getting over the emotional reliance on/connection with food is a really important step! I found that initially thinking about adding rather than cutting back helpful - adding glasses of water, adding delicious vegetable dishes, adding nuts, fruit etc. Over time my palate has changed getting used to and preferring foods that are less sugary. I also took up resistance-training (@Mindpump's Anabolic programme) Now having whole-food dishes feel like a treat because there doing me good and building strength! My body has started to change without me having to think about that as a goal. It's taken me a few months but I think it'll last a lifetime now Xxxx

I love seeing her a thin person talk about their unhealthy relationship with food. Most people think it’s just “fat” people who have unhealthy relationships with food and lifestyle. Just because your thin doesn’t mean your healthy some people just show their unhealthy on the outside because some gain weight and some don’t. I appreciate this so much because lots of people have unhealthy food relationships fat, skinny, big and small it’s just sad the bigger people get the stigma. Kelsey is so inspiring in this video thank you for this.

This! I'm average weight but so unhealthy, I eat garbage and never exercise, but my friends are just like whatever you're thin. I don't care about my weight I just want to be healthy!! I recently started exercising more and drinking less fizzy drinks so I'm getting there

SO true! In general, I eat healthily but have bad habits (at the desk all day, late hw nights, study snacks) and I have a yoyo relationship with food/gym/my body. My SO doesn't understand :(

Exactly! When I was a healthy weight, I severely underrate, and overate like crazy. I was incredibly depressed, and hated myself! It all starts mentally!

The things in these videos can also be applied to people in school. You have to remember these adults work and are very busy too. Anyone can work out. You can work out in your bedroom or by going on a run or a walk outside. Anyone can find ways to choose healthier food options, regardless of school or work. These are all personal decisions and routine changes you have to make. Creating a good routine around school& home work and not procrastinating long term homework projects will give you time to implement a work out routine and healthy eating. Just remember it’s not always a fast change. Little steps.

If you haven't seen the episode with Alison Stoner I definitely recommend you check it out! She was thin and looking for help with muscle mass and weight gain in a healthy way while working on routine and mental health. Might be a great place to start, and she has a pretty great channel too

Hey Michelle! I'd love to see some sort of therapy/mental support incorporated into this series! A lot of the people you feature on here are clearly struggling with body issues and forms of disordered eating/unhealthy relationships with food and body- and I think it would be a really great addition to your series to shed light on how important it is to also heal your mind and to work on building tools to strengthen that mental relationship with food and body through this process, with a professional counselor.

I loved this episode, it legit had me tearing up because Kelsey's relationship with food really hit home for me. I'm so proud of her for embracing this change and I love Michelle for working so hard to help her make this change. Not necessarily, he smiled a decent amount. I have a friend that's just like her, always on, and I'm more low-key, so I mostly just smile at her jokes. Not everything is laugh out loud funny.

"i feel like society says that you cant have a negative relationship with your body unless youre a certain size" i felt that hit me because i used to really really hate my body because i was on the more plump side 6 years ago. till today even though i gym and eat i still feel like i hate my body and it sucks because society teaches us to love our body but not now to not hate our body because of what we see on media as the "perfect body"

I had to give up sugar completely because it has such a negative impact on my mental health. I get so inconsolably depressed when I have sugar and it took me 28 years to figure it out. I’m glad I did though. If anyone else struggles with crippling depression, I suggest trying cutting out sugar, it is so life changing. I’m so much more outgoing and inspired to get stuff done.

Omg! Her comments about knowing that working out can help relieve pain but choosing not to do it SO hit the nail on the head for me. I suffer from RA and hear that all the time. It’s like dude, I know. I also work out, and I get it.

You don’t need to cut out ALL your favorite foods. It’s all about moderation. Bc if you cut it all out cold turkey you will do what Kelsey did, you will binge. But if you incorporate one of those foods into your calorie intake (caloric deficit) everyday or everyday couple days you won’t feel the need to binge. I’ve lost about 60 pounds doing this over the past year ♥️♥️ I love that at the end you get to see this and to not beat yourself up over some of the small things!!

Hi I’m puting myself out there & seeing what happens haha I’m 19 years old, born in El Salvador, raised in the U.S. (California & florida) Last year, at age 18- I moved to Taiwan (yes- ASIA) I am an outcast here in the daily life, but get to meet a lot of wonderful people, the last year I spent learning Chinese and now I’m starting my university degree here, I have known change, instability & discomfort my whole life, broken through a lot of obstacles, my parents divorce, moving around at least 8 different schools, countries, bullying, and social anxiety. I have been an advocate for self growth and self love and I practice it as much as possible, but I realized the one thing that I can’t break through on my own- that I need to reach out for help is- my relationship with having a healthy body, I see myself in Kelsey where my relationship with food is unhealthy, I see it as happiness, although I do enjoy eating healthy foods it’s even harder for me here in this country to eat the way I’m supposed to, I have always made excuses for my lack of effort into making my body the healthiest possible. I have cried countless times and put myself down, I hate shopping because I don’t like looking in the mirror and seeing how it doesn’t fit well, if you see this Michelle, and you are able to take on an international project, you would be the help I need to finally enable me to meet myself in the best version. I have chronic health/pain issues and food is one of the comforts that I use when it’s so bad all I can do is cry. I often feel like I can’t give that up and watch these videos thinking “oh, of course they can give that up, they don’t understand how bad I hurt.” I just want to say watching you Kelsey In this and other things gives me so much hope and inspiration.

Personally, I hate diets that "Take away" Food isn't just a thing we put in our face to fule our bodies, it is a lot more, it gives us emotion, it gives us connection, it brings us memories, it brings us calm. So yeah there can be a real emotional battle to "Take Away" a food from a person, this is why people yo-yo diet, because you take everything they eat, and everything they do, and all while mildly judging everything they are, rip it all from them and expect that they'll keep doing this thing forever. I've been doing an "Addition" diet, instead of taking things away I just make a point to add to what I'm eating, and for those additions to be healthy, so it's not like I can't have those cupcakes or starbucks or whatever, it's just a matter of making sure to eat a nice healthy balanced meal and drink a large glass of water before I present myself with the option to have those snacks, KNOWING those snacks will be still there tomorrow, or the next day, so I don't HAVE to binge on them, there are no cheat days because I don't have to deny myself anything, I just have to make better choices. If I order out I have to make sure whatever I'm getting is balanced with vegetables, fiber, protine, So I can get a pizza but I gotta get a side salad and the pizza's gonna be a small with veg. I dunno I have a lot of issues with weight and went through a lot of fights with disordered eating so while I was watching this seeing Kelsey's reaction to losing the food she loves just really bothered me on a personal level, because diets, lifestyle changes, being a better version of youself shouldn't come at that kind of emotional cost where you push yourself to the point of not wanting to do it anymore. If you're pushing so hard you want to quit, you're pushing too hard.

While I agree those types of things need to be a slow progression of changing her diet, a sugar detox does amazing things for the body. Sugar is so bad for you, and even worse for someone suffering from chronic pain. It is just pure fuel for those cells to be inflamed and make the pain worse. So she should move slow and take away one item at a time, but work toward not eating any refined sugars. There are plenty of sweet foods that aren't white sugar-based, and you can retrain your ideas of what your body craves. This is also a 6 week KZbin transformation. It has to be sped up for views.

Thank you for making this video with Kelsey, great representation for the chronic pain community. I was in the swimming team of my country and I’ve been grieving for 10 years and also sweets became my grieving food. The video helped me realize that and also inspired me to do strength exercises and don’t kill myslef with cardio, gym swimming. Thank you so much love

I truly love how you tackle health and wellness as a whole in these "makeovers." You respect people's boundaries. You don't belittle them when they make mistakes. Best of all, you honor the mind-body connection. It is the best reiteration of (for lack of a better term) "diet culture." For that, I commend you. If I may, though, offer a suggestion: Brian seems like a lovely guy who truly enjoys helping peple, but his title (nutritionist) suggests no formal education or credentialing. Furthermore, he gives some pseudoscience based advice such as dairy (I'm a vegan for ethical reasons, but the evidence is clear that dairy itself is not harmful to health), gluten, and carbohydrate avoidance. Modification, reduction, and sometimes avoidance can definitely improve health for certain populations, but it is not standard nutritional advice and is unnecessarily restrictive (unlikely to be sustainable).. I would suggest moving forward to use a Registered Dietitian that follows established guidelines and evidence based practice.

Don’t think I’d ever fully recognised how linked my issues with food and overeating were with my chronic pain, it’s so hard to keep that comfort in what is often a really uncomfortable life whilst making healthier food choices

I would like to see someone who is in recovery for an eating disorder. I also think it could be really helpfull to had a mental help with the food and sport. Often people struggle and it's mentally related. Otherwise I love this serie and I learn from it as well! ♡ (sorry english is not my primary langage)
