But Ramen can also beade gourmet. ;-) As for Risotto? Marrow is easy to procure and work with. Rice is able to be used with pretty much any; from Long Grain, to Jasmine, to Bismati. Some are better to use than others, but you'd be surprised what you may create. I recommend looking at Marco Pierre White's take on Risotto, which is simple, yet very effective. :)

I think I enjoy this for the chemistry between father and daughter and his unique humility considering the height to which he has risen. He fails to be entrapped by his own ego and invests so much in the next generation. The gentle humour at the end, the way he is outnumbered by the women, speaks volumes in a charming lovely way that is so counter to this bitter, twisted, entitled brat culture generation. Michel was once asked, ‘have you got any recipes for a moody teenager?’ and his response was that when he was a teenager he just got out there and worked.

2 things.. First, add the rice before the wine, coat the rice in all that lovely fat then deglaze and start the cooking. Second, season as you go starting with shallots, then rice and so on. perhaps less than usual as she stated the bone marrow is a touch salty. That said, this looks an amazing dish, substituting butter with the marrow is a fantastic idea. looking forward to trying this recipe, and will probably follow her instructions just to be proved wrong :)
